Black Bean And Plantain Burgers With Salvadoran Corn Tortillas

Pancake-thick Salvadoran-style corn tortillas make a great alternative to traditional buns in this delicious plant-based burger recipe. Succulent patties—made with black beans, plantains, bell pepper, and a hearty dose of smoky spices—are sandwiched between the homemade tortillas and drizzled with a spicy pepita sauce. The refreshing cabbage slaw adds a satisfying crunch, and a squeeze of lemon juice ties it all together. Serve open-faced or stack another tortilla on top!

INGREDIENTS

  • 2 cups shredded green cabbage
  • ½ cup shredded carrot
  • ¼ cup white wine vinegar
  • Sea salt, to taste
  • 2 plantains (preferably green plantains), peeled and cut into ½-inch pieces (1¾ to 2 cups)
  • 1¼ cups finely chopped onion
  • 1 cup finely chopped green bell pepper
  • 7 cloves garlic, minced
  • 1½ teaspoons dried Mexican oregano, crushed
  • 1 teaspoon ground cumin
  • 2 15-oz. cans black beans, rinsed and drained (3 cups)
  • 2 tablespoons lemon juice
  • ½ teaspoon ancho chile powder
  • ¼ teaspoon guajillo chile powder
  • 2 pinches freshly ground black pepper
  • 1½ cups tomato sauce
  • 2 tablespoons pepitas
  • 1¾ cups masa harina
  • Chopped fresh cilantro (optional)
  • Lemon wedges (optional)

INSTRUCTIONS

  1. For slaw topping, in a medium bowl combine cabbage, carrot, vinegar, and a sprinkle of salt. Massage cabbage to coat well. Let stand at least 1 hour.
  2. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  3. In a saucepan combine plantains, 1 cup onion, the bell pepper, 6 cloves garlic, 1 teaspoon oregano, the cumin, and ¼ cup water. Cook, covered, over medium 15 minutes or until plantains are tender and any liquid has cooked off, stirring occasionally and adding water, 1 to 2 tablespoons at a time, to prevent sticking.
  4. Add beans and lemon juice to pan; season with salt. Cook 3 minutes more. Cool mixture then mash well.
  5. Shape bean mixture into twelve 3-inch patties, using about ⅓ cup mixture per patty. Place on prepared baking sheet. Bake 30 to 45 minutes or until burgers are browned on top. Turn off oven; leave burgers in oven to keep warm.
  6. For Pepita Sauce, in a small saucepan combine the remaining ¼ cup onion, 1 clove garlic, and ½ teaspoon oregano. Add the ancho chile powder, guajillo chile powder, and black pepper. Cook over medium-low about 1 minute. Stir in tomato sauce; cook 2 minutes more. Cool 10 minutes. Transfer to a blender and add pepitas. Cover and blend until smooth. Set aside until ready to serve.
  7. Meanwhile, for tortillas, line a shallow bowl with a clean kitchen towel. Fill a small bowl with water. Place masa harina in a third bowl; add 1½ cups warm water and knead into a soft dough. Divide dough into 12 equal portions.
  8. Heat a large nonstick skillet over medium. Roll one dough portion into a ball. Pat the ball into a 3½- to 4-inch tortilla. Place tortilla in hot skillet and brush with water from the small bowl. Cook 5 minutes or until top and edges start to look dry and bottom is browned. Flip and cook 5 minutes more. Transfer to the towel-lined bowl; cover to keep warm. Repeat to make 12 tortillas.
  9. Place burgers on tortillas. Drizzle with Pepita Sauce and top with slaw. If desired, sprinkle with cilantro and serve with lemon wedges.

INGREDIENTS

  • ¼ cup cashews
  • 2 pounds russet potatoes (about 4 medium-large), scrubbed and chopped
  • 2 cups cooked brown rice
  • 8 ounces button mushrooms, sliced (about 4 cups)
  • 4 cups low-sodium vegetable broth
  • ½ teaspoon dried sage
  • ½ teaspoon dried marjoram
  • ½ teaspoon dried thyme
  • 1 clove garlic, minced
  • 2 tablespoons fresh lime juice (from 1 to 2 limes)
  • ⅛ teaspoon freshly ground white or black pepper, plus ¼ teaspoon freshly ground black pepper
  • Sea salt

INSTRUCTIONS

  1. Place the cashews in a small bowl and cover with 1 cup water. Set aside to soak for 30 minutes.
  2. Place the potatoes in a large saucepan and add cold water to cover. Bring to a boil over high heat, then reduce the heat to medium and cook until the potatoes are very tender when pierced with the tip of a sharp knife, about 20 minutes. Drain thoroughly and set aside to cool.
  3. Meanwhile, in a saucepan, combine the rice, mushrooms, and vegetable broth. Bring to a boil over medium-high heat, then reduce the heat to medium and simmer until the mushrooms are tender, about 10 minutes. Remove from the heat and let cool slightly. Carefully transfer the mixture to a blender or food processor and blend until smooth. (Alternatively, leave the mixture in the pan and use an immersion blender to blend until smooth.)
  4. If necessary, return the mixture to the pan. Add the sage, marjoram, thyme, garlic, lime juice, ⅛ teaspoon of the pepper, and salt to taste. Cook over medium heat for 10 minutes to blend the flavors. Cover to keep the gravy warm and set aside.
  5. Transfer the cashews and their soaking water to a clean blender. Add a pinch of salt and the remaining ¼ teaspoon pepper and blend until smooth. Pour the cashew cream over the potatoes and use a potato masher or handheld electric mixer to mash well. Taste and adjust the seasoning.
  6. Serve the mashed potatoes topped with the gravy.

INGREDIENTS

  • 2 15-oz. cans red kidney beans, rinsed and drained
  • 2 cups frozen mixed vegetables, thawed
  • 2 cups fresh spinach leaves, shredded
  • 3 cups cooked brown rice, warmed
  • 1 cup finely chopped tomatoes
  • ½ cup finely chopped green onions
  • 1 cup Cilantro-Cashew Dressing
  • 2 tablespoon finely snipped fresh cilantro

INSTRUCTIONS 

  1. In a medium saucepan combine beans and ½ cup water. Cook over medium heat just until heated through, stirring occasionally.
  2. Meanwhile, in a small saucepan cook frozen vegetables in a small amount of boiling water 5 minutes or just until tender; drain.
  3. Divide spinach among soup or salad bowls. Add beans, vegetables, and rice. Top with tomatoes and green onions, and drizzle with Cilantro-Cashew Dressing. Sprinkle fresh cilantro over the top. Serve warm.

INGREDIENTS

  • cups 2-inch cauliflower florets
  • 2 cups 1½-inch potato pieces
  • 1 cup onion wedges
  • ¼ cup tomato paste

  • 1 teaspoon cumin seeds
  • 1 clove garlic, minced

  • 4 cups cooked brown rice

INSTRUCTIONS

  1. Place cauliflower in a steamer basket in a large saucepan or deep skillet. Add water to just below basket. Bring to boiling. Cover pan and steam 5 minutes or until cauliflower is crisp-tender. Transfer cauliflower to a bowl.
  2. Place potato pieces in steamer basket, cover pan, and steam 10 minutes or until potatoes are tender. Add to cauliflower in bowl; drain water from pan.
  3. For sauce, in a blender combine onion wedges, tomato paste, curry powder, ginger, cumin seeds, and garlic. Add 1 cup of water. Cover and blend until smooth. Transfer sauce to a skillet, and stir in 1 more cup of water. Bring sauce to boiling; reduce heat to medium-high, and cook 5 to 7 minutes. Reduce heat to medium-low, and cook 10 minutes longer or until sauce darkens in color.
  4. Add steamed cauliflower and potatoes, peas, cashews, lime juice, and cayenne pepper to sauce. Cook 5 to 7 minutes or until sauce is absorbed by the vegetables, stirring occasionally and adding additional water if needed to reach desired consistency. Season with salt.
  5. Serve vegetable mixture over rice and sprinkle with cilantro.

INGREDIENTS

  • 2 medium sweet potatoes, diced (approximately 2 pounds)
  • 1 large red onion (approximately 10 ounces), finely chopped
  • 2 15 ounce cans salt-free kidney beans
  • 2 red bell peppers, seeded and finely diced
  • 2 pounds fresh tomatoes, diced (or 2 14.5 ounce cans of salt-free tomatoes)
  • 1 tablespoon salt-free chili powder
  • 2 teaspoons smoked paprika (makes a difference when it’s smoked)
  • ¼ teaspoon chipotle powder (or more to taste)
  • 2 cups lacinato kale finely shredded like coleslaw (around 8 ounces)
  • 3 cups of orange juice

INSTRUCTIONS

  1. In large pot, sauté onion and bell pepper in half of the orange juice for 8-10 minutes until onion is soft and translucent.
  2. Add all remaining ingredients except for the kale.
  3. Bring to a boil, and then reduce heat to simmer for 25-30 minutes until the sweet potatoes are soft, but not mushy.
  4. Turn off heat and stir in kale so it wilts, then serve.
  5. To make in an electric pressure cooker, place all ingredients in the cooker and cook on high pressure for 6 minutes and release pressure.

Be sure to keep a straight line from shoulders to ankles throughout this exercise while keeping abs tight and chin parallel to the floor above to avoid bending it or dropping it too low towards the floor causing injury to your neck. At this stage, lower your body until your chest almost hits the floor.

3) Crunches

Crunches are one of the simplest exercises that will help you tone your abs and sculpt a flat stomach while also working your hip muscles. Lie on your back with hands behind your head, knees bent at 90 degrees, feet together on a flat surface. This time, lift your upper body off the floor while leaving legs in place and elbows pointing to toes above. When lowering yourself, be sure to keep shoulders lifted off the floor for maximum benefits. At this stage, return to the starting position by bending your arms while exhaling without touching your lower back on the ground.

4) Lunges

Lunges help strengthen and tone your whole body.

Stand with feet together and legs apart while lowering your torso for a right diagonal angle. Pause briefly before returning to the initial position by pushing back harder through your hips while bending your left knee in order to get up quickly, returning to the initial position. When we think about Plant-based meats we don’t think about why they exist, but they exist to replace real meat so that animal cruelty, lifestyle diseases and the destruction of the environment can be avoided. They do not exist as a healthy superfood option. If you want a superfood option, then you have to look to eating whole foods.

From Meat to plant the transition is happening

However, the transition from eating meat and dairy to plant-based food is essentially taking place right now. More and more people want to eat plant-based meats rather than animal products which means that plant-based food will continue trending in the upcoming years.

Plant-based foods and vegetables will be a large part of our diets by 2025 because it is simply easier and more ethically responsible for people to choose plant-based foods. Not only that but a diet mainly consisting of whole foods is a healthier option and when people start to understand that the meat and dairy they have been consuming for decades is the reason why they have a top lifestyle disease they will opt for the plant-based meat option in place of the animal based products. It’s just common sense.

Are plant-based meats a whole food option?

Just for the record, plant-based meats whilst being an ethical and responsible option are not as healthy as a whole foods diet but are considered to be a healthier option to meat products as they contain a lot of valuable nutrition (see below).

If you look at the STANDARD WESTERN DIET, it is not a healthy diet and has contributed to the creation of the top four lifestyle disease which include heart disease, obesity, diabetes, and cancer. Meat and dairy products have now been linked to other diseases such as autoimmune diseases and Alzheimer’s.

Plant-based meats were designed as a transitional food, a temporary solution for people transitioning from meat products to a whole foods plant-based diet. They were not designed as a healthy alternative to whole foods.

Will the plant-based meat industry continue to grow?

Science and the food industry now see plant-based meat as a large part of the food market which will continue to grow and will generate an economic growth into the billions. This is good news for animals, the environment, and human health too.

By 2050 plant-based meats will outsell animal meat, thankfully. Even today, people are eating less meat and more plant- based foods, but they still want to have the same taste as real meat and this is understandable if you’ve been used to a lifetime of nothing but meat and dairy. But, I promise you, that the benefits you will receive from a whole foods plant-based diet will far outweigh the inconvenience of taste.

Is there a need to spread awareness?

With everyone starting to use plant-base meats there needs to be more awareness about what it is because people do not know how these products are made. There needs to be knowledge about Plant-based meats in order for people to understand that plant-based meats are actually plant-based products designed to replicate the taste and texture of real meat and they are not designed as a healthy option.

Plant-based meats are a great alternative because they do not contain cholesterol or saturated fats. They have less sodium which means that plant-based meals will be healthier for people’s cardiovascular health. These products can also be high in protein, iron, zinc, calcium and omega 3 fatty acids. This makes plant-based food an ideal choice for our future nutrition needs while maintaining a sustainable planet and the improvement of animal welfare.

What’s the goal of plant-based meat producers

When it comes down to plant-base meat producers, their goal is generally to develop an alternative to meat products and to do this they must replicate taste and texture which isn’t easy. Plant-based meats are simply great for people who want to reduce their carbon footprint, because they produce less greenhouse gasses than animal agriculture.

The amount of greenhouse gasses generated by PLANT-BASED foods production is far less than the amount generated through animal product manufacturing.

Also, it should be noted that plant- food generates 80% less CO2 than plant-base meats. People who eat plant-base food will not only reduce their carbon footprint, but they will also reduce their water usage as well.

Plant-based foods simply use a fraction of the water animal agriculture uses, that’s why Plant-based foods are a better solution for future generations.

Are plant-based meats expensive?

Plant-based meat are considered expensive but when you weigh up the cost of free range organic meat products to plant-based products they come out cheaper. No one should be eating the cheap meat products, they are not good for human health, the animals, or the environment. They are toxic!

Plant-base meat alternatives obviously need to be within everyone’s budget, so plant-base industries have been working on making plant-based products accessible for everyone. We have already seen a drop in the price of some high-street plant-based brands and as technology evolves and mass production improves prices will continue to reduce.

When it comes to your shopping bill buying plant-based food and meats really doesn’t need to be costly. When you shop wisely, you will notice your shopping bills actually reduce in cost.

The key here is to buy responsibly, ethically, and healthily.

AND don’t forget, those same people who report that plant-based meats are bad for you and the environment would also find a reason to tell you that we can live without the bumblebee. Which, incidentally, is not true. We can’t!

So where to go from here? Have some fun exploring which plant-based meat is the one for you but don’t stop at the first two brands you come across. As with meat products, we don’t all like everything, it’s a case of trial and error and preference.

Taco-Spiced Tortilla Chips

Unlike store-bought chips, these seasoned tortilla chips have no artificial ingredients and are oven-baked, not fried. And they are just as addictive. Serve them with Cheesy Sauce, Sonoran Desert Tepary Bean and Roasted Red Pepper Hummus, or Green Pea Guacamole, or enjoy the flavorful chips on their own.

INGREDIENTS

  • 1 tablespoon nutritional yeast
  • 1 tablespoon lemon juice
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon ground coriander
  • ½ teaspoon ground cumin
  • ¼ teaspoon chile de árbol or chipotle chile powder
  • ¼ teaspoon sea salt
  • 5 oil-free corn tortillas, cut into bite-size triangles

INSTRUCTIONS 

  1. Preheat oven to 300°F. Line a baking sheet with parchment paper.
  2. In a bowl stir together the first nine ingredients (through salt) and 1 Tbsp. water. Add tortilla triangles; toss gently to coat.
  3. Spread tortillas on prepared baking sheet. Bake 1 hour or until crispy. Let chips cool completely on pan. Store in an airtight container.

Moroccan Chickpea-Potato Tagine

This hearty Moroccan tagine is delicious served over couscous or any other hot cooked whole grains you enjoy. Potatoes and chickpeas soak up the fragrant flavors of fresh ginger and ras el hanout (look for the spice blend at Middle Eastern markets or make your own to create a savory plant-based stew that warms you up from the inside out. Chopped dried apricots add pockets of sweetness throughout the dish while sliced lemon rind brings bright acidity to the hearty ingredients. Tagines are traditionally slow-cooked in an earthenware vessel of the same name, but a large, heavy-duty sauté pan with a lid will do the trick for this recipe.

INGREDIENTS

  • 1 cup finely chopped yellow onion
  • 4 cloves garlic, minced
  • 2 teaspoons grated fresh ginger
  • 4 tomatoes, peeled, seeded, and chopped (3 cups)
  • 2 tablespoons ras el hanout spice blend
  • 2 tablespoons roughly chopped fresh cilantro
  • ¼ cup chopped dried apricots
  • 2 tablespoons finely chopped lemon rind
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • 2 15-oz. cans chickpeas (garbanzo beans), rinsed and drained
  • 1½ lb. Yukon gold potatoes, peeled and cut into 1½-inch pieces (4 cups)

INSTRUCTIONS

  1. In a 10-inch sauté pan or large deep skillet combine onion, garlic, ginger, and ¼ cup water. Cook over medium 10 minutes or until onion is tender, stirring occasionally. Add tomatoes, ras el hanout, and 1 tablespoon of the cilantro. Cook and stir 2 minutes. Stir in the next four ingredients (through pepper). Bring to boiling; reduce heat. Cover and simmer 10 minutes. Turn off heat.
  2. Stir in chickpeas. Lay potatoes over top in a single layer. Cover and cook over medium low 15 to 20 minutes or until potatoes are just tender but not mushy. Sprinkle with the remaining cilantro.
  3. Serve tagine over couscous or other hot cooked whole grains. When spooning tagine out of pan, carefully scoop the vegetables without stirring them. Spoon sauce from the bottom of the pan over vegetables.
