Super Greens Soup With Chickpeas

Super Greens Soup With Chickpeas

Super Greens Soup With Chickpeas

A little tahini is all you need to add an underlying depth of flavor to this hearty green-hued soup. A single potato helps to thicken it, and loads of greens make it super-nourishing! Top with pomegranate seeds, chickpeas, and peas.

This smooth, emerald-hued soup features tasty bites of tender chickpeas and sweet green peas. An immersion blender makes quick work of puréeing the base, but you can also scoop the soup into a traditional blender and purée it in batches. Seasoned with creamy tahini, dill, and lemon juice, this satisfying soup is an easy and creative way to eat your veggies.

INGREDIENTS

  • 8 oz. broccoli
  • 1 medium onion, roughly chopped (2 cups)
  • 2 medium potatoes, cut into ½-inch dice (2 cups)
  • 3 cloves garlic, minced
  • 4 cups chopped fresh Swiss chard, with stems
  • 4 cups chopped fresh collard greens, stems removed
  • 4 cups chopped fresh spinach
  • 1 (15-oz.) can chickpeas, rinsed and drained (1½ cups)
  • 3 tablespoons lemon juice, divided
  • 2 tablespoons finely chopped fresh dill, divided
  • ⅛ teaspoon freshly ground black pepper
  • Sea salt, to taste
  • 2 tablespoons tahini
  • ½ cup pomegranate seeds
  • ½ cup fresh or frozen green peas

INSTRUCTIONS    Super Greens Soup With Chickpeas

  1. Cut the broccoli into large pieces, keeping the florets separate from the stems. You should have about 4 cups total. Peel any very tough stems. Place stems in a large soup pot. Add onion, potato, garlic, and 3 cups water. Bring to boiling over high heat; then reduce heat to medium-low. Cook, covered, 10 minutes.
  2. Add broccoli florets to the pot and cook 15 minutes more, or until broccoli is very tender. Add the Swiss chard and collard greens; cook 5 minutes more. Add the spinach; cook another 5 minutes.
  3. Use an immersion blender to puree the soup until smooth. (Or carefully transfer the soup to a blender, working in batches if necessary, and blend until smooth, then return pureed soup to the pot.) The consistency should be moderately thick; add a little water if you need to thin it.
  4. Stir in 1 cup chickpeas, the lemon juice, 1 tablespoon dill, and the pepper. Season with salt. Return soup to boiling, then turn off heat.
  5. Meanwhile, in a small bowl, whisk the tahini with ¼ cup water until a smooth paste forms; stir mixture into soup.
  6. For topping, in another small bowl combine pomegranate seeds, green peas, the remaining ½ cup chickpeas, and the remaining 1 tablespoon dill. Ladle soup into bowls, and garnish each with 2 tablespoons of topping. Serve warm.

Irish White Bean And Cabbage Stew

Irish White Bean And Cabbage Stew

Irish White Bean And Cabbage Stew

Loaded with basic ingredients like cabbage, potatoes, barley, and white beans, this classic Irish stew is seriously delicious—a healthy, filling meal all on its own.

I created this recipe from basic ingredients (cabbage, potatoes, carrots) and seasonings (parsley, thyme, rosemary) that can be found in the simple, hearty dishes of Irish home cooking. With barley and white beans, too, it’s a healthy, filling meal all on its own. Check out our roundup of vegan St. Patrick’s Day recipe ideas for more inspiration.

INGREDIENTS

  • 1 large onion, chopped
  • 3 ribs celery, chopped
  • 2 to 3 cloves garlic, minced
  • ½ head cabbage, chopped
  • 4 carrots, sliced
  • 1 to 1-½ pounds potatoes, cut in large dice
  • 1⁄3 cup pearled barley (optional or substitute with gluten-free grain)
  • 1 bay leaf
  • 1 teaspoon thyme
  • ½ teaspoon caraway seeds
  • ½ teaspoon rosemary, crushed
  • ½ teaspoon freshly ground black pepper
  • 6-8 cups vegetable broth or low-sodium vegetable broth
  • 3 cups cooked great northern beans (2 cans, drained)
  • 1 14 ½-ounce can diced tomatoes
  • 1 tablespoon chopped parsley
  • salt to taste

INSTRUCTIONS

  1. Crock Pot: Place the vegetables, seasonings, and barley into a large (at least 5 quart) slow cooker. Add enough vegetable broth to just cover the vegetables (start with 6 cups and add more as needed). Cover and cook on low heat for 7 hours.  Add beans, tomatoes, parsley, and salt to taste. Check seasonings and add more herbs if necessary. Cover and cook for another hour.
  2. Stovetop: Place vegetables, seasonings, barley, and broth into a large stockpot. Cover and simmer until vegetables are tender, about 45 minutes. Add remaining ingredients, check seasonings, and add more herbs if necessary. Simmer uncovered for at least 15 minutes before serving.

8 Ideas To Make Your Workouts More Enjoyable

8 Ideas To Make Your Workouts More Enjoyable

8 Ideas To Make Your Workouts More Enjoyable

Are you ever jealous of your friends who love to go to the gym? It would be so easy if working out was actually enjoyable. We all know that one of the most undesirable things to do is endure a boring workout. But don’t give up just yet. We’ve compiled some ideas to make your training fun. Take a look.

1. Find your fitness buddy.

Time flies by when you’re chatting with a friend. Go on a walk with someone who also wants to exercise, and thirty minutes can turn into an hour quickly. If you’re unable to meet up with friends because of the pandemic, it’s not a problem. Grab your headphones and talk on the phone!

2. Try something new.

Consider that you don’t enjoy your workouts because you haven’t found the right one yet. Try something new and fun like kickboxing or dancing. Embrace your sexiest self and opt-in for pole dancing classes. Or try aerial yoga. The possibilities are endless!

3. Find your best workout playlist.

Rock, dubstep, house, or hip hop are great motivational sounds to get the heart pumping. Search for specific workout playlists, or build your own in advance to ensure you don’t want to stop until you drop.

4.Find other sources for entertainment.

Download a captivating audiobook, like a thriller or romance novel. Or opt-in for a funny podcast that you only listen to while you work out. This way, you’ll associate comedy with your exercise routines. TV shows and movies also serve to keep you distracted as you sweat.

5.Play your favorite smartphone game.

Find one that you love and play it until the workout is over. This option may be best for those who like to exercise on sitting bikes, so your hands are free to move letters on your online crossword puzzle or to swipe around while playing Candy Crush.

6.Pick at least three exercise outfits that you love.

Invest time and effort into your most favorite workout gear. When you look good, you feel good. And when you’re feeling good, you’ll have more fun in your new clothes.

7.Set up a workout space at home.

Sometimes we don’t want to take the time to drive to the gym. To remedy this, create a space at home dedicated to working out. Even if it’s a small setup in your living room, it can quickly be turned into a personal gym with the help of a yoga mat, some hand weights, and a couple of resistance bands. Follow your specialized online fitness training program all in the comfort of your own home.

8.Write your own workout plans.

Have some fun and create workouts made just for you. Look online to find what you like most, and write down a daily workout routine that will skip over all the boring exercises and get you straight to what you want. Be sure to follow instructions for the workouts you find, and maintain a well-rounded routine.

Try every one of these ideas to get you ready for the most enjoyable fitness routine that will turn you into a brand new fitness-loving you!
