  • Sea salt and freshly ground black pepper, to taste

BOWLS

    • 1 small sweet potato, peeled and thinly sliced

    • 3 cups fresh baby spinach
    • 1¼ cups cooked wheat berries
    • ½ of a 15-oz. can no-salt-added cannellini beans, rinsed and drained

    • ½ of an avocado, seeded, peeled, and sliced
    • Optional toppings: sliced green onions, sliced radishes, and/or fresh orange slices

Instructions:

  1. Make Orange Vinaigrette: Remove ½ tsp. zest and squeeze 2 Tbsp. juice from 1 orange. In a small bowl whisk together zest and juice, white wine vinegar, fresh herbs, and Dijon-style mustard. Season with salt and pepper to taste. Set aside.
  2. Preheat oven to 375°F. Line a baking sheet with parchment paper. Arrange sweet potato slices in a single layer on baking sheet. In a small bowl stir together orange juice, curry powder, and paprika. Brush over sweet potato. Bake 15 to 20 minutes or until tender. Cool potato in pan on a wire rack.
  3. Divide spinach between two bowls. Top with sweet potato, wheat berries, beans, blueberries, and avocado. Drizzle Orange Vinaigrette evenly over bowls. Add desired toppings.

Instructions:

  1. In a small saucepan bring 2½ cups of water to boiling. Stir in millet. Return to boiling; reduce heat. Simmer, covered, 10 minutes. (All of the water will not be absorbed.) Remove from heat. Let stand, covered, at least 10 minutes.
  2. Meanwhile, in a large skillet combine leek, bay leaves, ginger, garlic, and ½ cup water. Cook over medium 5 minutes, stirring occasionally. Add asparagus; cook 8 to 10 minutes or until water is evaporated and asparagus is crisp-tender.
  3. Stir millet, coconut milk, date, and pepper into asparagus mixture. Bring to boiling over medium-high; remove from heat. Remove and discard bay leaves. Stir in lime juice. Season with salt and, if desired, additional lime juice. Top servings with cilantro.

Gone are the days of bland plant-based burgers! Curry vindaloo powder and coriander work wonders in these Indian-inspired veggie burgers. Made from a base of chickpeas, brown rice, and fresh veggies, each patty is succulent and satisfying. This recipe will be a hit at any cookout or BBQ you host.

This is my personal favorite plant burger variation, having gotten hooked on anything Indian food–related during my first travels to India. An expanded version of the basic plant burger recipe, this burger has been specifically hailed as a huge hit with families transitioning to plant-based eating.

Ingredients:

BASE

  • 1 (15-ounce) can chickpeas, rinsed and drained (about 1½ cups)
  • 1 cup cooked short-grain brown rice

VEGETABLES/NUTS

  • ½ cup chopped sweet onion
  • ½ cup grated carrot
  • ½ cup chopped baked potato
  • ¼ cup chopped walnuts

BINDER

  • 1 cup bread crumbs

SEASONINGS

  • 1 clove garlic, crushed, or ½ teaspoon garlic powder
  • 2 teaspoons curry vindaloo powder
  • 1 teaspoon ground coriander
  • ½ teaspoon sea salt

MOISTENER

  • 2–3 tablespoons unsweetened, unflavored plant milk

CRISP COATING

  • ¼ cup cornmeal or garbanzo flour (more as needed)

Instructions:

  1. Lightly pulse the beans in a food processor, leaving some chunks for texture, or partially mash them with a potato masher. Place the beans into a large bowl, along with the rice.
  2. Finely chop the raw vegetables. I use my food processor, first cutting the vegetables into 1-inch pieces and then pulsing until finely chopped. Add the vegetables and nuts to the bowl with the beans and rice.
  3. Add the binder and seasonings to the bowl, and knead to make the mixture workable for forming burgers. Add the moistener, 1 tablespoon at a time, if the burgers don’t hold together well. Chill for an hour or more, if time allows.
  4. Form the mixture into palm-size patties about ⅜-inch thick.
  5. Place the cornmeal or chickpea flour coating on a plate. Gently coat both sides of each burger, one at a time. Roll the edges against a flat surface to make a round shape with flat sides, and pat the coating onto the sides as well. This adds a nice crispy surface and helps the burgers keep their shape.
  6. Cook the burgers in a nonstick pan over medium heat for 5 minutes, then turn and cook the other side for 4 to 5 minutes more. You can also bake the burgers on a baking sheet at 350°F for about 20 minutes.
  7. Serve on buns or alone with your favorite condiments. Expect a savory, soft texture and a thin, crisp crust.

    Notes:
    Rice: Short-grain brown rice has a stickiness that holds the burgers together; substituting long-grain rice or another grain may result in a burger that falls apart more easily. For a more savory flavor, cook the rice in vegetable broth instead of water.

    Nuts: While the nuts add texture and flavor, you can eliminate them to reduce fat content.

  • ¼ cup unsweetened, unflavored plant-based milk

Instructions:

  1. In a large skillet toast cumin seeds over medium 1 minute or until fragrant. Add the next five ingredients (through serrano) and ¼ cup water. Cover and cook 10 to 15 minutes or until onion is translucent, stirring occasionally and adding water, 1 to 2 tablespoons at a time, as needed to prevent sticking.
  2. Stir in tomato, turmeric, cayenne pepper, cinnamon, cloves, and ¼ cup water. Cook 5 minutes more or until tomatoes soften. Season with salt and black pepper.
  3. Add beet greens and ½ cup water; cook 10 minutes more or until greens wilt, stirring occasionally. Add spinach; cook 2 to 3 minutes more or until spinach turns bright green.
  4. Remove from heat and cool vegetables for a few minutes. Transfer vegetables to a blender. Cover and blend until smooth.

Mixed Berry Jam With Chia Seeds

Preserve juicy summer produce with this simple berry jam recipe that’s free from refined sugars. A delectable combination of strawberries, blackberries, and raspberries are stewed with maple syrup and cinnamon sticks for a fruity medley with a hint of a warming spices. Chia seeds contribute fiber to the jam and help bind it together without using traditional thickening agents so you get the purest, most delicious end result possible! Ingredients:

  • 2 cups sliced fresh strawberries
  • 2 cups fresh blackberries
  • 2 cups fresh raspberries
  • ½ cup pure maple syrup
  • ¼ cup chia seeds
  • 6-inch stick cinnamon

Instructions:

  1. In a large saucepan combine half of each of the berries and the maple syrup. Bring just to boiling, stirring frequently; reduce heat to medium-low. Simmer, uncovered, 5 minutes. Remove from heat.
  2. Lightly mash berry mixture. Stir in the remaining berries, the chia seeds, and stick cinnamon. Bring just to boiling; reduce heat. Simmer, uncovered, 10 minutes or until thickened. Remove from heat. Remove and discard cinnamon.
  3. Ladle hot jam into clean half-pint jars or airtight containers (leave ½-inch headspace if freezing). Seal. Store in the refrigerator up to 3 weeks or freeze up to 6 months.
