Corn and Mushroom Empanadas

These plant-based empanadas are great pass-around food. The casing is made from wheat flour, potato flour, and cashews and the filling is a mix of corn, mushroom, and spinach. Serve with Chimichurri, a parsley- and cilantro-based sauce.

Empanadas are single-serving pastries that can be filled with sweet or savory ingredients. They are made in many parts of the world, but they are especially identified with Argentina. Empanadas are traditionally fried, but these are baked. The combination of potato flour and whole-wheat flour gives the pastry a light, crisp texture. I serve the empanadas with Chimichurri, a traditional Argentinian herb-based condiment. Empanadas are labor-intensive, but you can prepare the dough and filling, and even assemble them, a day in advance. Then all you’ll have to do is bake them just before serving. If you can’t find potato flour, use 1½ cups mashed, cooked russet potatoes (about 1½ pounds) instead.

INGREDIENTS

DOUGH

  • ½ cup raw cashews
  • 1 cup potato flour
  • ½ cup whole-wheat flour
  • ½ teaspoon sea salt
  • Unbleached all-purpose (or whole-wheat) flour for dusting

FILLING

  • ½ pound white mushrooms, trimmed and roughly chopped (3 cups)
  • 1 small yellow onion, cut into ¼-inch dice
  • 1 jalapeño pepper, seeded and finely chopped
  • 2 medium garlic cloves, minced
  • 3 cups fresh or frozen corn kernels
  • 2 tablespoons white miso paste
  • 2 teaspoons ground cumin
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon freshly ground black or white pepper
  • 3 cups chopped fresh spinach
  • Sea salt
  • 1 cup finely chopped fresh cilantro
  • 1 tablespoon flaxseed meal (brown or golden)

NSTRUCTIONS

  1. To make dough, soak cashews in ½ cup hot water for 20 minutes. Transfer cashews and soaking liquid to a blender or food processor; blend until creamy.
  2. In a food processor fitted with a dough blade or a stand mixer fitted with a dough hook, combine cashew “cream”, potato flour, whole-wheat flour, salt, and 1½ cups water; mix to a smooth dough, adding water if needed to make the dough come together.
  3. Using a spatula, scoop the dough into a large bowl; let it stand for 10 to 15 minutes.
  4. To make filling, in a large sauté pan, combine mushrooms, onion, jalapeño, and garlic; sauté over medium heat for 10 to 15 minutes, stirring frequently, until the onion are translucent and the water from the mushrooms has cooked off. Add corn, miso, cumin, cayenne, and pepper; cook 5 minutes more.
  5. Add spinach and cook for 2 minutes, or until spinach is wilted. Add salt to taste. Transfer filling to a large bowl to cool for 5 minutes. Stir in cilantro.
  6. Preheat oven to 350°F. Line two baking sheets with parchment paper.
  7. In a small saucepan, combine flaxseeds and ½ cup water. Bring to a boil and simmer until mixture gels, about 2 minutes. Strain out the seeds and preserve the gel.
  8. Prepare a station to roll out the dough. You’ll need a large cutting board or other clean, flat surface, a rolling pin, a pastry brush, a bowl of all-purpose flour for dusting, and the bowl of flaxseed gel.
  9. Lightly dust the work surface with flour. Transfer dough onto the floured surface and knead until smooth.
  10. Scoop 1 generous tablespoon of dough and roll it into a ball. Repeat with remaining dough until you have 24 to 30 balls.
  11. Re-dust work surface and rolling pin with flour. Roll a dough ball in flour, and use the rolling pin to flatten it into a 4-inch disk, dusting with more flour as needed. Repeat until you have six disks, and place them on one of the prepared baking sheets.
  12. Spoon 2 tablespoons of filling onto the middle of each disk. Fold the dough in half, press the edges together to seal, and crimp edges using your fingers or the tines of a fork. (Dust fingers or fork with flour if the dough is too sticky.) Transfer the empanadas to the second prepared baking sheet.
  13. Repeat steps 10–12 to form remaining empanadas, then divide them evenly between the two baking sheets. Brush each empanada with flaxseed gel. Bake 25 minutes.
  14. Remove the trays from the oven and increase the heat to 400°F. Flip the empanadas using a thin spatula and brush with flaxseed gel. Return empanadas to oven, rotating baking sheets from front to back and top to bottom racks for even baking. Bake 10 minutes, until the tops are golden brown.
  15. Let empanadas cool for 5 to 10 minutes. Serve warm or at room temperature with the Chimichurri for dipping.

INGREDIENTS

  • 1½ tablespoons ground flaxseed
  • 1 cup unsweetened plain almond milk
  • ½ cup unsweetened applesauce
  • ½ cup pure maple syrup
  • 1 cup corn meal
  • 1 cup oat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup frozen corn kernels, thawed

INSTRUCTIONS

  1. Preheat oven to 375°F.
  2. In a small bowl, combine flaxseed with almond milk and set aside to allow it to gel for 5 minutes.
  3. In a large mixing bowl, stir applesauce and maple syrup together and add flaxseed mixture. Then sift in cornmeal, oat flour, baking soda, baking powder, and salt. Stir until well-combined, but avoid over-mixing. Add the corn kernels.
  4. Either using a silicone 12-cup muffin pan or a 12-cup muffin pan lined with paper, spoon out equal portions of batter into the cups.
  5. Bake for 20 minutes or until toothpick comes out clean when inserted into the center. Serve warm.

In this easy recipe, a spicy-tart rub pairs well with the tender kernels of grilled fresh corn on the cob. You’ll never miss butter. Grilling with the husks on helps keep the corn from tasting too smoky, and soaking it first helps prevent the husks from catching fire on the grill. Be sure to use 100-percent cotton string, as synthetic string will melt during cooking.

INGREDIENTS

  • 6 ears of corn with husks
  • ¼ cup lime juice
  • 1 teaspoon ground chipotle chile pepper
  • ½ teaspoon garlic powder
  • ¼ teaspoon sea salt

INSTRUCTIONS

  1. Peel back corn husks, but do not remove. Remove silks; rinse corn. Fold husks back around corn and tie with 100-percent cotton kitchen string to hold closed. Soak corn in enough water to cover 1 to 2 hours; drain.
  2. Grill corn, covered, over medium 30 to 35 minutes or until kernels are tender, turning once.
  3. Meanwhile, in a small bowl combine remaining ingredients.
  4. Remove string from corn and pull back husks. Tie husks with string to hold open. Brush corn with lime juice mixture.

Fresh corn does double duty in this festive pasta salad: first as the base of a delicious, subtly sweet dressing; and second, in the salad itself, nestled among vibrant vegetables such as bell pepper, grape tomatoes, and zucchini spirals.

This festive pasta salad features five ears of corn: Three help form a velvety base for the oil-free dressing, while the other two get cut into planks, giving the dish a cool appearance. (Don’t worry if they break up a little.)

INGREDIENTS

  • 5 ears sweet corn, husks and silks removed
  • 1 small clove garlic
  • 3 tablespoons lemon juice
  • 2 teaspoons Dijon-style mustard
  • Sea salt and freshly ground black pepper, to taste
  • 4 cups dried whole wheat rotini or penne pasta (12 oz.)
  • 1½ cups frozen shelled edamame
  • 1 medium zucchini or yellow summer squash, trimmed and spiral sliced (2 cups)
  • 2 cups halved red and/or yellow grape tomatoes
  • 1½ cups coarsely chopped orange bell pepper
  • ¼ cup chopped fresh basil and/or Italian parsley

INSTRUCTIONS

  1. Make Creamy Corn Dressing: Cook 5 ears of the corn in enough boiling water to cover 2 minutes; drain. Cool slightly. Reserve two ears for Step 3. From other three ears, cut corn from cobs. In a blender combine corn, garlic, and ½ cup water. Cover and blend until smooth. Press mixture through a fine-mesh sieve into a bowl; discard solids. Whisk together corn mixture, lemon juice, mustard, and sea salt and freshly ground black pepper to taste. Set aside.
  2. Cook pasta according to package directions, adding edamame the last 2 minutes of cooking; drain. Rinse with cold water until cooled; drain again. Snip zucchini noodles into 2-inch lengths.
  3. In a large bowl combine pasta mixture, zucchini, tomatoes, bell pepper, and basil. Add half of the Creamy Corn Dressing; toss to coat. Cut remaining corn from cobs into planks. Top pasta mixture with corn planks. Pass remaining dressing.

Applesauce and polenta form the base of this naturally sweet and perfectly moist vegan cake, which makes a gorgeous addition to any Thanksgiving or holiday spread. A homemade cherry compote with autumnal spices adds extra sweetness and a hint of tanginess. This recipe is gluten-free if you use gluten-free oat flour, and can be baked up to two days in advance. The cake tastes best served warm: If you make it ahead of time, place it on an oven-safe platter and warm in a 350°F oven for about 20 minutes.

INGREDIENTS

  • 1½ cups frozen cherries
  • 2 cups unsweetened applesauce
  • 1 tablespoon ground cinnamon
  • 2 whole star anise (optional)
  • 1 pinch ground cloves
  • 1 cup dry polenta
  • 1 cup unsweetened, unflavored plant-based milk
  • ½ cup pure maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon pure vanilla extract
  • ½ cup oat flour
  • ¼ cup almond flour
  • 1 tablespoon arrowroot powder
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 2 medium unpeeled apples

INSTRUCTIONS

  1. Make Cherry Compote: In a small saucepan combine cherries, 1 cup of the applesauce, the cinnamon, star anise (if using), cloves, and 1 cup water. mix well. Cook over medium-low about 20 minutes or until thick and syrupy, stirring occasionally. Remove from heat; discard star anise. Use a potato masher to crush cherries to a pulp. Cool and chill until ready to serve.
  2. In a large mixing bowl stir together the remaining 1 cup applesauce, the polenta, plant milk, maple syrup, vinegar, and vanilla. Let stand 20 minutes. In a small bowl whisk together the next five ingredients (through baking soda).
  3. Preheat oven to 375°F. Line a 9-inch round cake pan with parchment paper.
  4. Core apples and slice into ¼-inch-thick wedges. Arrange apple slices in rows or a spiral pattern in the cake pan, working from the center outward to completely cover the base of pan.
  5. Add the flour mixture to the milk mixture, stirring well. Pour batter over apples, spreading evenly.
  6. Bake about 1 hour or until a toothpick inserted in the center of the cake comes out clean. Let cool in pan at least 30 minutes. Invert onto a serving platter. Serve warm with Cherry Compote.

Tip: To neatly slice corn from the cob, stand the stem end on the center hole of a tube pan. Slice downward so kernels fall into the pan.

INGREDIENTS

  • ½ cup chopped onion
  • ½ cup chopped red bell pepper
  • 3 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1½ cups low-sodium vegetable broth
  • 2 lb. chopped red potatoes
  • 1½ cups fresh sweet corn kernels (cut from 3 ears)
  • 1 medium zucchini, halved lengthwise and sliced
  • 1 cup grape tomatoes, halved
  • ⅓ cup chopped fresh herbs, such as basil, dill, parsley, and/or thyme
  • Sea salt, to taste
  • Freshly ground black pepper, to taste

INSTRUCTIONS

  1. In an extra-large skillet cook onion, bell pepper, garlic, and chili powder over medium 3 to 4 minutes, stirring occasionally. Add vegetable broth, 1 to 2 tablespoons at a time, as needed to prevent sticking. Add potatoes and 1 cup of the broth. Cover and cook 10 to 15 minutes or until potatoes are almost tender.
  2. Add corn, zucchini, and the remaining broth; cook 5 to 7 minutes or until tender. Stir in tomatoes and herbs. Cook 1 to 2 minutes or until heated through. Season with salt and black pepper.

Veggie Fajita Kabobs

For a fun way to eat corn cobs this summer, skewer two-inch pieces of fresh corn with other veggies and throw them onto the grill. A tangy lime marinade perfectly complements the tender, smoky flavor of the veggies, while a drizzle of vegan queso adds just the right amount of creaminess to round out the meal perfectly. Serve with rice and beans.

Before hitting the grill, these colorful kabobs are brushed with a lime juice mixture that plays well with the roasted fajita veggies’ natural sweetness. A quick vegan queso adds creaminess, and a side of herbed rice and beans rounds things out. Be sure to cut veggies into uniform pieces and thread them onto skewers to allow them to cook evenly without falling through the grill rack. Or save a little time by cooking vegetables in a grill pan or wok instead of placing them on skewers. Enjoy any leftover queso as a snack with fresh vegetable sticks. 

Note: Chile peppers contain oils that can irritate your skin and eyes. Wear plastic or rubber gloves when working with them. 

INGREDIENTS

  • ¾ cup raw cashews
  • 1 teaspoon. chipotle chile pepper in adobo sauce
  • 3 tablespoons nutritional yeast
  • 2 cloves garlic, divided
  • ¼ teaspoon chili powder
  • 2 medium red, green, and/or yellow bell peppers, cut into 1-inch pieces
  • 2 ears corn, husked and cut into 2-inch pieces
  • 1 cup cherry tomatoes (16)
  • 2 medium fresh poblano chile peppers, cut into 1-inch pieces (see note, above)
  • 2 tablespoons lime juice
  • 1 teaspoon reduced-sodium soy sauce
  • ¼ teaspoon ground cumin
  • ⅛ teaspoon crushed red pepper
  • 8 scallions (green onions), trimmed
  • 2 cups hot cooked brown rice
  • 1 15-oz. can no-salt-added black beans, rinsed and drained
  • ¼ cup chopped fresh cilantro
  • 1 teaspoon lime zest
  • Sea salt and freshly ground black pepper, to taste
  • 1 lime, cut into wedges

INSTRUCTIONS

  1. Make Vegan Queso: In a bowl soak cashews in enough boiling water to cover 30 minutes; drain. In a blender combine drained cashews, chipotle chile pepper in adobo sauce, nutritional yeast, 1 clove garlic, the chili powder, and ¾ cup water. Cover and blend until smooth. Add sea salt to taste. Chill until ready to serve.
  2. Thread bell peppers, corn, tomatoes, and poblanos onto eight 10-inch metal skewers, leaving ¼ inch between pieces. In a bowl combine lime juice; soy sauce; the remaining garlic, minced; the cumin; and crushed red pepper. Brush over kabobs and scallions.
  3. Grill kabobs, covered, directly over medium-high 8 to 10 minutes or until lightly charred on all sides, turning occasionally. Add scallions the last 2 minutes of grilling, turning once.
  4. Stir together rice, black beans, cilantro, and lime zest. Place on a serving platter with kabobs and green onions. Season with salt and black pepper. Drizzle with Vegan Queso and serve with lime wedges.

INGREDIENTS

  • ½ cup brown rice, rinsed and drained (1½ cup cooked)
  • 1 (15-oz) can chickpeas, drained and rinsed
  • 1 medium zucchini, cut into matchsticks
  • 1 red bell pepper, sliced
  • 2 scallions, thinly sliced
  • ½ 14-oz. can light coconut milk (¾ cup)
  • 1½ tablespoons fresh lime juice
  • 1½ tablespoons almond butter
  • 2¼ teaspoons grated fresh ginger
  • ¾ teaspoon low-sodium soy sauce (or tamari or liquid aminos)
  • 1 teaspoon red curry paste
  • 1 clove garlic
  • ¼ sea salt, plus more to taste
  • 1 pinch crushed red pepper flakes (optional)
  • 1½ tablespoons fresh basil, finely chopped (optional)
  • 1 lime cut into wedges

INSTRUCTIONS

  1. Preheat the oven to 425°F. In a saucepan over high heat, bring rice and 1 cup water to boiling. Reduce heat to low, cover, and simmer for 45 minutes. Remove from heat and let cool; fluff rice with a fork.
  2. Meanwhile, in a high-powered blender (or a food processor), combine coconut milk, lime juice, almond butter, ginger, soy sauce, curry paste, garlic, and salt (alternatively, use an immersion blender and a deep cup). Purée until smooth.
  3. Pour almond curry into a baking dish and stir in pepper flakes (if using). Add chickpeas, zucchini, bell peppers, and scallions, and stir well. Cover dish with aluminum foil and bake for 25 minutes. Remove foil, stir, and bake, uncovered, for 5 to 8 minutes more. (Remove once it starts to thicken—you don’t want it to become pasty.)
  4. Season curry with a few pinches of salt to taste, if desired. Serve curry over rice, topped with basil, if desired, alongside lime wedges.

Lime juice, chipotle pepper, green chiles, and cumin give Mexican flavor to the sweet yam filling in these delectable plant-based quesadillas.

Serve these with salsa (and guacamole, if you wish) spooned over the top. You can eat them with a knife and fork or cut them into wedges that you pick up with your fingers and dip into the salsa and/or guacamole (like this Pea Guacamole!).

INGREDIENTS

  • 2 pounds garnet yams, peeled and diced
  • 2 tablespoons vegetable broth
  • 2 tablespoons chopped green chiles
  • 2 teaspoons fresh lime juice
  • 1 teaspoon minced chipotle peppers in adobo sauce
  • ¾ teaspoon ground cumin
  • ½ teaspoon minced garlic
  • 1 can (15 ounces) black beans, drained and rinsed
  • 8 whole-wheat tortillas
  • Fresh salsa of your choice
  • Pea Guacamole

INSTRUCTIONS

  1. Put the yams in a stainless-steel saucepot with enough water to cover. Bring to a boil, then reduce the heat and simmer, covered, until soft, about 12 minutes. Drain the water and add the vegetable broth to the yams. Mash with a potato masher until quite smooth, then stir in the green chiles, lime juice, chipotle, cumin, and garlic. Mix well, stir in the black beans, and mix again.
  2. Heat a nonstick griddle or large skillet over medium heat. Spread some of the yam mixture on half of a tortilla, then fold it over and flatten. Place the folded tortilla on the griddle and cook it for about 2½ minutes on each side, flipping several times to make sure it doesn’t burn. Repeat with the remaining yam mixture and tortillas. Serve topped with salsa and/or guacamole.

    Note: This kid-friendly recipe makes quite a large amount. However, Yamadillas store well overnight in the refrigerator. Reheated on the griddle the next day, they’ll taste just like they were freshly made.

  1. Preheat the oven to 350°F. In a large skillet, cook the sweet potato, onion, and sweet pepper over medium heat for 10 minutes, stirring occasionally, and adding water, 1 to 2 tablespoons at a time, as needed to prevent sticking.
  2. Add basil, turmeric, garlic, and thyme; cook and stir for 1 minute or until garlic is softened. Stir in the tofu and yeast, and season with salt and black pepper.
  3. Spread the mixture into a nonstick 15×10-inch baking pan. Bake 35 minutes or until tofu is lightly browned, turning occasionally.
  4. Spoon the tofu mixture and salsa onto each tortilla, just below the center. Fold the bottom edge of the tortilla over the filling. Fold in opposite sides; roll up tortilla.
