INGREDIENTS

  • ½ teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 cup finely chopped onion
  • 1 jalapeño chile, seeded and finely chopped
  • 1 tablespoon grated fresh ginger
  • 3 cloves garlic, minced
  • 1 small pumpkin (2 lb.), peeled, seeded, and cut into ¾-inch pieces (5 cups)
  • 1 cup dry red lentils
  • 1 cup coarsely chopped tomato
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon ground turmeric
  • ½ teaspoon paprika
  • 2 tablespoons lime juice
  • ½ teaspoon sea salt
  • Freshly ground black pepper, to taste
  • 1 cup chopped fresh spinach

INSTRUCTIONS

  1. In a large skillet cook mustard and cumin seeds over medium 2 to 3 minutes or until toasted and starting to pop. Reduce heat to medium-low. Add onion, jalapeño, ginger, and garlic; cook and stir about 10 minutes or until onion is tender, adding water, 1 to 2 tablespoons at a time, as needed to prevent sticking.
  2. Add the next seven ingredients (through paprika) and 5 cups water; stir well. Cover and cook about 20 minutes or until lentils are just tender. Stir in lime juice, salt, and black pepper. Sprinkle with spinach just before serving.

INGREDIENTS

  • 2 leeks, trimmed, halved, and sliced
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 3 cloves garlic, minced
  • 1½ 32-oz. containers low-sodium vegetable broth
  • 4 cups chopped stemmed collard greens
  • 2 15-oz. cans no-salt-added black-eyed peas, rinsed and drained
  • 1 medium zucchini, halved lengthwise and cut into ¼-inch-thick slices
  • 2 teaspoon Italian seasoning, crushed
  • ¾ teaspoon smoked paprika
  • ½ teaspoon crushed red pepper (optional)
  • 1 to 2 tablespoons red wine vinegar
  • 2 tablespoons chopped fresh parsley

INSTRUCTIONS

  1. In a large pot cook leeks, celery, carrots, and garlic over medium 5 minutes, stirring occasionally and adding water, 1 to 2 Tbsp. at a time, as needed to prevent sticking. Add the next seven ingredients (through crushed red pepper, if using). Bring to boiling; reduce heat. Cover and simmer 20 minutes or until vegetables are very tender.
  2. Season to taste with red wine vinegar. Sprinkle with parsley.

  1. In a Dutch oven combine the first six ingredients (through caraway) and ¼ cup water. Cook over medium about 10 minutes or until vegetables soften, stirring occasionally and adding water, 1 to 2 tablespoons at a time, as needed to prevent sticking.
  2. Add the next five ingredients (through crushed red pepper) and 2 cups water. Bring to boiling; reduce heat. Simmer, uncovered, 15 minutes or until squash is fork-tender.
  3. In a small bowl whisk together oat flour and ¼ cup water; stir into stew. Stir in beans and vinegar. Cook 5 minutes more or until thickened. Season with salt and black pepper.

  • 1 green bell pepper, finely chopped (1 cup)
  • ½ cup finely chopped onion
  • ½ cup finely chopped celery
  • 3 small cloves garlic, minced
  • 1 bay leaf
  • 2 cups low-sodium vegetable broth or water, plus more as needed
  • 1 15-oz. can no-salt-added diced tomatoes, undrained
  • 1 15-oz. can unripe jackfruit (in water brine), drained, rinsed, and cut into 1-inch pieces
  • 1 15-oz. can red kidney beans, rinsed and drained

  • 1 tablespoon Creole seasoning
  • 1½ teaspoons fresh lemon juice
  • Sea salt and freshly ground black pepper, to taste

INSTRUCTIONS

  1. In a Dutch oven cook bell pepper, onion, celery, garlic, bay leaf, and ½ cup water over medium 10 minutes or until onion is translucent. Add water, 1 to 2 tablespoons at a time, as needed to prevent sticking.
  2. Add vegetable broth, tomatoes, jackfruit, beans, rice, and Creole seasoning. Bring to boiling; reduce heat. Simmer, covered, 20 to 30 minutes or until jambalaya thickens, stirring occasionally. Add more broth or water as needed to prevent sticking.
  3. Remove and discard bay leaf. Add lemon juice and season with salt and pepper. Sprinkle with parsley.

  1. In a Dutch oven cook the first five ingredients (through ginger) over medium 10 minutes or until onions start to turn golden brown, stirring frequently and adding water, 1 to 2 tablespoons at a time, as needed to prevent sticking.
  2. Add 6 cups water, the kombu (if using), and desired spice blend. Bring to boiling; reduce heat. Simmer, covered, 50 minutes or until lentils and/or legumes are tender. Add vegetables and tomato. Cook 10 minutes or just until tender.
  3. Add lemon juice; season with salt and pepper. Taste and adjust seasonings. Remove and discard kombu. Serve warm with steamed grains, crackers, or bread.
