Spicy French Fries

Plain baked fries are certainly tasty enough, but once in a while it’s nice to spice it up, as we do here.

INGREDIENTS

  • 1 tablespoon onion powder
  • 1½ teaspoons garlic powder
  • 1½ teaspoons sweet paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • ¼ teaspoon cayenne pepper
  • Sea salt
  • 1½ pounds russet potatoes (3 or 4 medium-small), scrubbed and cut into 1-inch-thick wedges
  • 2 tablespoons fresh lemon juice (from 1 lemon)
  • Ketchup and Dijon mustard, for serving (optional)

INSTRUCTIONS

  1. Preheat the oven to 450°F. Line a baking sheet with parchment paper.
  2. Place a steamer basket in a large pot and add about 2 inches of water. Place the potatoes in the steamer, cover and steam on high heat for 10 minutes. The potatoes will be about 75 percent cooked.
  3. In the meantime, in a medium bowl, stir together the onion powder, garlic powder, paprika, turmeric, coriander, cayenne, lemon juice and salt to taste.
  4. Transfer the potatoes to the bowl with spices and toss gently but well to coat the potatoes evenly. Arrange the potato wedges on the baking sheet, leaving plenty of room between them.
  5. Bake for 20 to 25 minutes.
  6. Serve the fries hot, with ketchup and Dijon mustard for dipping, if desired.

If you like stuffed grape leaves, you’ll love the tangy filling for these bell peppers that conjure up daydreams of vacationing on a Greek island. The savory black lentil mixture is studded with sweet raisins and infused with the Mediterranean flavors of mint and dill. The recipe calls for instant brown rice, but you can use any kind. Simply adjust the cooking time and water amounts to the directions on the package. Then get ready to dig in!

Tip: If you want to make extra stuffed peppers, you can freeze them in aluminum baking pans that go straight into the oven for reheating.

INGREDIENTS

  • ¾ cup dry instant brown rice
  • 1 cup finely chopped onion
  • 3 cloves garlic, minced
  • 1 cup cooked black (beluga) lentils, rinsed and drained
  • 1 medium zucchini (8 oz.), chopped
  • ⅓ cup chopped raisins
  • ½ cup chopped fresh mint
  • ¼ cup chopped fresh dill or 2 tablespoons dried dill
  • 6 medium orange bell peppers
  • 4 tablespoons lemon juice

INSTRUCTIONS

  1. Preheat oven to 375°F. In a medium saucepan combine rice, onion, garlic, and 2 cups water. Bring to boiling; reduce heat. Cover and simmer 10 to 12 minutes or until liquid is absorbed. Remove from heat. Stir in the next five ingredients (through dill) and 2 tablespoons of the lemon juice.
  2. Meanwhile, cut off pepper tops; set aside. Remove seeds and membranes from peppers. Place peppers snugly in a 4-qt. Dutch oven or a deep, lidded ovenproof pan.
  3. Spoon rice mixture into peppers. Place tops on peppers, then pour the remaining 2 tablespoons lemon juice and ¼ cup water into bottom of pot. Cover and bake for 1 hour. Serve peppers warm or at room temperature with pan juice drizzled over top.

This satisfying Mediterranean salad gets extra bulk from farro, an heirloom wheat that was a staple ingredient in Ancient Rome. Farro has a chewy texture and doesn’t get soggy easily, making it ideal for salads and soups. Serve lemon wedges alongside this salad for squeezing over top. The fresh juice adds a bright, tangy finish.

INGREDIENTS

  • 1 cup dry farro
  • 2 orange and/or yellow bell peppers, chopped
  • 1 9- to 12-oz. package frozen artichokes, thawed and chopped
  • 1 medium shallot, finely chopped (¼ cup)
  • ⅓ cup Kalamata and/or Castelvetrano olives, pitted and coarsely chopped
  • 2 tablespoons chopped fresh oregano
  • Sea salt and freshly ground black pepper, to taste
  • 2 cups grape tomatoes
  • 2 tablespoons red wine vinegar
  • ¼ teaspoon crushed red pepper
  • 1 lemon, cut into wedges

INSTRUCTIONS

  1. In a large saucepan combine farro and 3 cups water. Bring to boiling; reduce heat. Cover and simmer about 30 minutes or until tender. Place farro in a colander; run under cold water. Drain well.
  2. In a large bowl combine farro and the next five ingredients (through oregano). Season with salt and black pepper.
  3. In a large nonstick skillet cook tomatoes over medium-high 7 to 10 minutes or until they’re blistered and starting to pop, stirring occasionally. Remove from heat. Stir in vinegar and crushed red pepper. Add tomatoes to farro mixture. Toss to combine. Serve with lemon wedges.

  • 3 medium zucchini, halved lengthwise and cut into ¼-inch slices (4 cups)
  • 1 15-oz. can chickpeas, rinsed and drained (1½ cups)
  • 1 cup oil-free marinara sauce
  • 1 tablespoon white wine vinegar
  • Sea salt and freshly ground black pepper, to taste
  • 8 to 10 fresh basil leaves, chopped

  1. Heat an extra-large skillet over medium. Add the first five ingredients (through thyme); cook 10 minutes, stirring often and adding water, 1 to 2 Tbsp. at a time, as needed to prevent sticking.
  2. Add zucchini; cook 10 minutes more or until zucchini is tender. Stir in chickpeas, marinara sauce, and vinegar. Season with salt and black pepper. Heat through. Serve immediately garnished with basil.

How do you make a creamy potato salad when using whole foods? Simple! Mash up a fresh ripe avocado, and substitute it for the vegan mayo (not an ingredient I use in my kitchen!) I like to season this recipe to give it an extra kick, so it’s truly a dish you can enjoy on its own or paired with a light soup or wrap. Get ready to try the best whole-food potato salad ever!

INGREDIENTS

  • 2 pounds small red potatoes
  • 1 large avocado
  • 2 teaspoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • ¼ teaspoon smoked paprika
  • ½ teaspoon (or less) Herbamare or sea salt
  • 1½ teaspoons maple syrup or liquid sweetener (optional, to balance the acidic lemon and spicy mustard)
  • Freshly ground black pepper
  • ⅓ cup fresh dill, packed and then chopped
  • ½ bunch green onions (green part), sliced
  • 3 stalks celery, trimmed and sliced
  • ½ white onion, diced

INSTRUCTIONS

  1. Wash the potatoes and cut out any bad spots or eyes. Steam gently for about 10 minutes, until just fork tender through the center. Immediately run under cold water to prevent further cooking.
  2. For best results, refrigerate the cooked potatoes for about an hour. (This ensures they don’t fall apart when slicing.)
  3. Quarter the potatoes and peel if desired. Place in a large bowl.
  4. Peel and mash the avocado in a small bowl. Add the lemon juice, mustard, paprika, Herbamare or salt, and maple syrup (if using), and stir into the avocado to create a dressing. Season with pepper to taste.
  5. Add the dill, green onion, celery, onion, and avocado dressing to the potatoes. Toss gently until everything is coated. Taste test and adjust seasonings if desired.
  6. Serve the same day, or refrigerate and serve the next day, (as the avocado darkens and breaks down quickly).

  • cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1 cup thinly sliced celery
  • ¼ cup white wine vinegar
  • 2 tablespoons pure maple syrup

  • 3 red apples, such as Braeburn, Jazz, or Honeycrisp
  • 2 carrots

INSTRUCTIONS

  1. Combine the green cabbage, red cabbage, and celery in an extra-large bowl.
  2. Whisk together the vinegar, maple syrup, mustard, and salt in a small bowl.
  3. Spiralize or shred the apples and carrots using the coarse blade of a spiralizer or the coarse side of a box grater; add to the cabbage mixture. Drizzle with dressing; toss to coat.

No-Fry Fried Rice

Yum! I love this oil-free, vegan, fried rice dish. Top with cilantro and fresh chile and you are good to go! Sometimes I also add Sriracha, because I’m an addict … don’t judge me.

INGREDIENTS

TERIYAKI SAUCE

  • 1 small clove garlic, crushed
  • 1 small nob ginger, finely grated
  • 1 tablespoon low-sodium Tamari
  • 2 tablespoons dry sweetener
  • ½ cup water
  • 1 tablespoon cornstarch plus 1 tablespoon water

UNFRIED RICE

  • 1 cup frozen or fresh corn
  • 2 carrots, diced
  • 3 green onions, chopped
  • 4 mushrooms, sliced
  • 1 8-ounce can chopped pineapple, or fresh if available
  • 2 cups baby spinach
  • 1 red chile, seeded and diced
  • ½ cup chopped cilantro
  • 1 small head broccoli, diced
  • 2 cups uncooked brown jasmine rice

INSTRUCTIONS

  1. Give your rice a good wash and then cook it according to package directions or in a rice cooker.
  2. Heat a tablespoon of water over medium-high heat in a nonstick frying pan or wok, until the water begins to simmer. Add the carrots, broccoli, and green onions and cook until the onions are translucent, about 5 minutes.
  3. Add the mushrooms, corn, pineapple, spinach, chile, and cilantro. Mix together and turn down to medium heat. Add water 1 to 2 tablespoons at a time as needed, to keep the vegetables from sticking to the pan.
  4. To prepare the sauce, place the garlic, ginger, tamari, and coconut sugar in a small saucepan. Stir and let it cook for a minute or until the sugar dissolves. Add the ½ cup water.
  5. Mix the cornstarch and water together in a small bowl. Add the cornstarch mixture to the sauce, stir well, and let it cook and thicken for a further 2 minutes.
  6. Once the rice is cooked, throw it in the pan with the cooked veggies, pour your delicious sauce on top and mix it all through! Serve immediately.

  • 1 medium cucumber, halved lengthwise and thinly sliced (2 cups)
  • 2 medium bell peppers, any color, cut into bite-size strips
  • ½ cup slivered red onion
  • Fresh cilantro leaves
  • Lemon wedges

INSTRUCTIONS

  1. Preheat oven to 425°F. Line a large rimmed baking sheet with parchment paper. In a large bowl stir together ¼ cup of the lemon juice and the next nine ingredients (through black pepper). Add cauliflower and chickpeas; stir to coat. Spread evenly in prepared baking sheet. Roast 35 minutes or until cauliflower is browned on edges, stirring once.
  2. In a small bowl stir together tahini, the remaining 2 tablespoons lemon juice, the cayenne, and 3 to 4 tablespoons water. In bowls arrange rice, cauliflower mixture, cucumber, pepper strips, and red onion. Drizzle with tahini mixture. Sprinkle with cilantro leaves and serve with lemon wedges.

INGREDIENTS

  • 2 cups shredded green cabbage
  • ½ cup shredded carrot
  • ¼ cup white wine vinegar
  • Sea salt, to taste
  • 2 plantains (preferably green plantains), peeled and cut into ½-inch pieces (1¾ to 2 cups)
  • 1¼ cups finely chopped onion
  • 1 cup finely chopped green bell pepper
  • 7 cloves garlic, minced
  • 1½ teaspoons dried Mexican oregano, crushed
  • 1 teaspoon ground cumin
  • 2 15-oz. cans black beans, rinsed and drained (3 cups)
  • 2 tablespoons lemon juice
  • ½ teaspoon ancho chile powder
  • ¼ teaspoon guajillo chile powder
  • 2 pinches freshly ground black pepper
  • 1½ cups tomato sauce
  • 2 tablespoons pepitas
  • 1¾ cups masa harina
  • Chopped fresh cilantro (optional)
  • Lemon wedges (optional)

INSTRUCTIONS

  1. For slaw topping, in a medium bowl combine cabbage, carrot, vinegar, and a sprinkle of salt. Massage cabbage to coat well. Let stand at least 1 hour.
  2. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  3. In a saucepan combine plantains, 1 cup onion, the bell pepper, 6 cloves garlic, 1 teaspoon oregano, the cumin, and ¼ cup water. Cook, covered, over medium 15 minutes or until plantains are tender and any liquid has cooked off, stirring occasionally and adding water, 1 to 2 tablespoons at a time, to prevent sticking.
  4. Add beans and lemon juice to pan; season with salt. Cook 3 minutes more. Cool mixture then mash well.
  5. Shape bean mixture into twelve 3-inch patties, using about ⅓ cup mixture per patty. Place on prepared baking sheet. Bake 30 to 45 minutes or until burgers are browned on top. Turn off oven; leave burgers in oven to keep warm.
  6. For Pepita Sauce, in a small saucepan combine the remaining ¼ cup onion, 1 clove garlic, and ½ teaspoon oregano. Add the ancho chile powder, guajillo chile powder, and black pepper. Cook over medium-low about 1 minute. Stir in tomato sauce; cook 2 minutes more. Cool 10 minutes. Transfer to a blender and add pepitas. Cover and blend until smooth. Set aside until ready to serve.
  7. Meanwhile, for tortillas, line a shallow bowl with a clean kitchen towel. Fill a small bowl with water. Place masa harina in a third bowl; add 1½ cups warm water and knead into a soft dough. Divide dough into 12 equal portions.
  8. Heat a large nonstick skillet over medium. Roll one dough portion into a ball. Pat the ball into a 3½- to 4-inch tortilla. Place tortilla in hot skillet and brush with water from the small bowl. Cook 5 minutes or until top and edges start to look dry and bottom is browned. Flip and cook 5 minutes more. Transfer to the towel-lined bowl; cover to keep warm. Repeat to make 12 tortillas.
  9. Place burgers on tortillas. Drizzle with Pepita Sauce and top with slaw. If desired, sprinkle with cilantro and serve with lemon wedges.

INGREDIENTS

  • ¼ cup cashews
  • 2 pounds russet potatoes (about 4 medium-large), scrubbed and chopped
  • 2 cups cooked brown rice
  • 8 ounces button mushrooms, sliced (about 4 cups)
  • 4 cups low-sodium vegetable broth
  • ½ teaspoon dried sage
  • ½ teaspoon dried marjoram
  • ½ teaspoon dried thyme
  • 1 clove garlic, minced
  • 2 tablespoons fresh lime juice (from 1 to 2 limes)
  • ⅛ teaspoon freshly ground white or black pepper, plus ¼ teaspoon freshly ground black pepper
  • Sea salt

INSTRUCTIONS

  1. Place the cashews in a small bowl and cover with 1 cup water. Set aside to soak for 30 minutes.
  2. Place the potatoes in a large saucepan and add cold water to cover. Bring to a boil over high heat, then reduce the heat to medium and cook until the potatoes are very tender when pierced with the tip of a sharp knife, about 20 minutes. Drain thoroughly and set aside to cool.
  3. Meanwhile, in a saucepan, combine the rice, mushrooms, and vegetable broth. Bring to a boil over medium-high heat, then reduce the heat to medium and simmer until the mushrooms are tender, about 10 minutes. Remove from the heat and let cool slightly. Carefully transfer the mixture to a blender or food processor and blend until smooth. (Alternatively, leave the mixture in the pan and use an immersion blender to blend until smooth.)
  4. If necessary, return the mixture to the pan. Add the sage, marjoram, thyme, garlic, lime juice, ⅛ teaspoon of the pepper, and salt to taste. Cook over medium heat for 10 minutes to blend the flavors. Cover to keep the gravy warm and set aside.
  5. Transfer the cashews and their soaking water to a clean blender. Add a pinch of salt and the remaining ¼ teaspoon pepper and blend until smooth. Pour the cashew cream over the potatoes and use a potato masher or handheld electric mixer to mash well. Taste and adjust the seasoning.
  6. Serve the mashed potatoes topped with the gravy.
