Who says salads aren’t filling? Freshly air-fried falafels add delicious heft to this recipe, which features classic Mediterranean ingredients. Hearty bulgur, juicy tomatoes, crunchy cucumber, and briny olives create a kaleidoscope of flavors, and a generous drizzle of creamy cashew-based dressing is the perfect finishing touch.

With warm falafel, creamy dressing, and a medley of chopped veggies, this vegan Greek salad is seriously satisfying. Lining the air fryer basket with foil helps the falafel get nicely browned, so don’t skip this step. Serve with whole wheat pita for a heartier meal. Note that this recipe calls for chilled cooked bulgur, so be sure to have that ready to go.

INGREDIENTS

  • 1½ 15-oz. cans no-salt-added chickpeas (garbanzo beans), undrained (2¼ cups)
  • ⅓ cup shredded zucchini
  • ⅓ cup finely chopped onion
  • ⅓ cup packed fresh parsley
  • 3 tablespoons chickpea flour
  • 1½ teaspoons ground cumin
  • ¾ teaspoon ground coriander
  • Sea salt and freshly ground black pepper, to taste
  • 6 cups chopped romaine
  • 2 cups chilled cooked bulgur
  • 2 cups cherry tomatoes, halved
  • 1 cucumber, quartered lengthwise and cut into ½-inch slices
  • ¼ cup chopped red onion
  • 2 tablespoons slivered Kalamata olives
  • ¼ cup raw cashews, soaked 20 minutes in hot water
  • ¼ cup white wine vinegar
  • 4 teaspoons Dijon mustard
  • 2 cloves garlic
  • 6 to 8 tablespoons unsweetened, unflavored plant milk, such as almond, soy, cashew, or rice

INSTRUCTIONS

  1. Preheat air fryer to 375°F. Drain chickpea liquid (aquafaba) into a bowl. In a food processor combine the chickpeas, 1 Tbsp. of the aquafaba, and the next six ingredients (through coriander). Cover and process until mixture starts to come together and is nearly smooth, stopping to scrape sides of bowl as necessary. Add additional aquafaba as needed to achieve a nearly smooth texture that adheres together. Season with salt and pepper.
  2. For falafel, form chickpea mixture into 12 balls (2 Tbsp. each) and flatten to ¾ inch thick. Line air fryer with foil. Place falafel in a single layer on the foil, in batches if necessary. Air-fry 12 to 14 minutes or until firm and browned, carefully turning once.
  3. For salad, arrange the next six ingredients (through olives) on a serving platter.
  4. For dressing, drain soaked cashews. In a small food processor or blender combine cashews, vinegar, mustard, and garlic. Cover and process until nearly smooth, gradually adding milk until creamy.
  5. Serve falafel on salad and drizzle with dressing.

Tip: Add the amount of plant milk you like to get the desired consistency. Pesto should be spreadable but not too runny!

INGREDIENTS

  • ¼ cup raw cashews
  • 2 cups packed fresh basil
  • 2 tablespoons nutritional yeast
  • 3 cloves garlic, roughly chopped
  • 2 teaspoons lemon juice
  • ⅛ teaspoon sea salt
  • 2 to 4 tablespoons unsweetened, unflavored plant milk, such as almond, soy, cashew, or rice

INSTRUCTIONS

  1. Place cashews in a bowl; cover with boiling water. Let soak for 30 minutes; drain. Place cashews in a food processor with the next five ingredients (through salt). Cover and process until nearly smooth, adding plant milk 1 tablespoon at a time to reach desired consistency, and stopping to scrape sides of the processor as needed.
  2. To serve, toss 2 tablespoons of pesto with every 1 cup of hot cooked pasta. Or use as directed in recipes. Transfer extra pesto in an airtight container. Cover surface with plastic wrap; chill up to 2 days.

INSTRUCTIONS

  1. Preheat oven to 450°F. Line two 15×10-inch baking pans with foil. Spread cauliflower, potatoes, onion, and garlic evenly in pans. Sprinkle with 2 tablespoons of the vinegar and 2 tablespoons water. Roast 25 to 30 minutes or until vegetables are tender and browned.
  2. Set aside 2 cups of the roasted vegetables for garnish. Transfer the remaining vegetables to a large pot. Add broth and 3 cups water. Bring to boiling; reduce heat. Simmer, uncovered, 15 minutes to blend flavors. Using an immersion blender, blend soup. (Or carefully transfer in batches to a blender. Cover and blend.) Stir in the remaining 1 to 2 tablespoons of vinegar, the nutmeg, and cayenne.
  3. Serve soup topped with reserved vegetables, the herbs, and black pepper.

(Don’t add water; you want the onion to brown.) Add the next five ingredients (through cumin). Cook 10 minutes or until eggplant is tender, stirring occasionally.
  2. For tahini sauce, in a bowl stir together tahini, lemon juice, parsley, the remaining 3 cloves minced garlic, and ¼ cup water until smooth. Season with salt. Stir in additional water if needed to reach drizzling consistency.
  3. Open pita halves to make pockets. Spread hummus in pockets. Add ⅓ cup each lettuce and vegetable filling to each pita pocket. Just before serving, drizzle filling with tahini sauce.

  • 2 tablespoons almond butter
  • ⅓ cup ready-to-eat sun-dried tomatoes, thinly sliced

INSTRUCTIONS 

  1. Cook fettuccine according to package directions for al dente, adding peas the last 3 minutes of cooking. Drain, reserving ¾ cup cooking liquid.
  2. Meanwhile, in a food processor combine beans, garlic, nutritional yeast, and almond butter. Process until smooth. Add the reserved cooking liquid; process until smooth.

  • 1 scallion, chopped

  • 2 cups cubed peeled sweet potato
  • 1 8-oz. can no-salt-added tomato sauce
  • 2 teaspoons ancho chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • 8 6-inch whole wheat tortillas
  • 2 cups Instant Pot O’ Beans
  • 4 cups fresh baby kale, shredded
  • 4 cups fresh baby spinach, shredded
  • ½ cup slivered red onion
  • 2 medium oranges, peeled and sectioned

INSTRUCTIONS

  1. For Cilantro-Orange Crema, place cashews in a bowl. Cover with boiling water. Cover bowl. Let stand for 2 hours; drain.
  2. In a blender combine soaked cashews, cilantro leaves, lime juice, scallion, 1 teaspoon orange zest, and ¼ cup water. Cover and blend until smooth, scraping sides of blender and adding water, 1 tablespoon at a time, if needed to reach drizzling consistency. Reserve for serving.
  3. Preheat oven to 350°F. Place sweet potato cubes in a steamer basket in a large saucepan. Add water to saucepan to just below basket. Bring to boiling. Steam, covered, 10 minutes or until very tender. Remove sweet potato; cool.
  4. Meanwhile, for enchilada sauce, in a small saucepan combine tomato sauce, ancho chili powder, onion powder, garlic powder, paprika, and 1 cup water. Bring to boiling; reduce heat. Simmer, uncovered, about 5 minutes or until sauce slightly thickens. Set aside.
  5. Spread ¼ cup of the sauce in a 2-quart square baking dish. In a bowl mash together sweet potato and the remaining 1 teaspoon orange zest. Spread over tortillas.
  6. Drain beans, reserving 2 tablespoons of the liquid. Stir together beans and reserved liquid; spoon beans over potatoes and roll up tortillas. Arrange enchiladas tightly in the dish. Pour remaining sauce over top. Cover dish with foil and bake for 30 to 35 minutes or until heated through.
  7. Toss together kale and spinach. Arrange on plates and top with enchiladas. Drizzle with Cilantro-Orange Crema and garnish with red onion and orange sections.
