Creating A Reality To Want To Live

It was no easy feat to create my own reality and make things happen. All I had was a dream.

Continuous efforts from researching the lives of my favourite plant-based doctors who have achieved what I was aiming for led me to take the plunge. I managed to create an incredible opportunity for myself: and I interviewed my four top plant-based heroes.

I had spent years reading their books, I‘d seen their interviews ,and I’d followed them on social media; it was a life-changing experience to finally be able to ask them questions face-to-face and learn from the best. I’d never interviewed anyone before and so I set out with one mission in mind to ask the doctors the questions my clients frequently asked me.

During the interviews, they all talked about how plant-based health is the way forward. They agreed that having a well-thought-out plan to take care of your well-being and follow it consistently is essential in order to optimize your physical and mental health. With a comprehensive outline of how to maintain optimum health, we are better able to prevent illnesses, manage existing ailments and stay true to ourselves along the way. The interviewees also highlighted how important it is for us all to have an awareness of how our lifestyle choices affect our overall wellness and I learnt a lot from these interviews but the main take aways were:

All in all, it was an invaluable learning experience to be able to gain so much insights from such knowledgeable professionals who have put their heart and soul into promoting a healthy lifestyle through plant-based nutrition. I am grateful that I had this incredible opportunity, which has encouraged me to keep striving towards better health myself and to help others improve their lives too.

This experience reinforced my belief that when we eat a plant-based diet based on good habits and routines, we can make long-term changes that benefit us in body, mind, and spirit. I’m thankful every day for this experience with my plant-based heroes and how it has shaped how I approach not only my health but also in reshaping my own reality today.

Coming up with the ultimate holiday menu is a stress you seriously don’t need. Stop the madness! Here is a whole holiday feast on a single, festive plate. You’re welcome.

THE VEGAN CHRISTMAS PLATE, baked yams, steamed corn and pepper garlic brussels sprouts with mushroom nut loaf, tahini ginger miso gravy and orange cranberry sauce.

INGREDIENTS

Cranberry sauce:

  • 5 cups cranberries
  • 1 cup orange juice
  • 1/2 cup grapefruit juice

Nut loaf:

  • 1 cup mushrooms
  • 1 cup walnuts
  • 2 cups black beans
  • 1 tablespoon sesame seeds
  • 1/4 cup sunflower seeds
  • 2 tablespoon flax seeds mixed with 6 tablespoons water
  • 1 cup oats
  • 1/2 onion
  • 1/3 cup nutritional yeast
  • 2 tablespoons dried rosemary leaves
  • 1 tablespoon dried sage leaves
  • 1 teaspoon sea salt (optional)
    2 teaspoons paprika

Brussels sprouts:

  • 2 tablespoons coconut oil
  • 3 grated/finely chopped garlic cloves
  • Black pepper
  • 1 teaspoon maple syrup (optional)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon tamari, soy sauce or Bragg’s
  • Water, as needed

Yams:

  • 2 yams

Corn:

  • 2 cobs of corn

Gravy:

  • 2 tablespoons miso paste
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • 1 teaspoon ginger root
  • Water, as needed

INSTRUCTIONS

  • To make the cranberry sauce: simmer the berries with the juices on low, stirring often, until the berries pop and get mushy and it all becomes a delicious gooey red sauce. This will take around 10 minutes. 
  • Nut loaf: throw everything in the food processor and process until it all is evenly chopped and starting to stick together. Shape into a loaf in a small bread pan and bake for 30-40 minutes at 350 degrees. 
  • To prepare the brussels sprouts: on low heat in a pan, sauté the garlic in the coconut oil for a few minutes then add the sprouts and the rest of the ingredients and sauté until they soften, about 15 minutes. I add water to the pan as they cook, this steams them and helps them to cook without having to add more oil. 
  • To prepare the yams: bake on parchment paper at 350 for 30 minutes, then flip over and bake for another 20 or 30 minutes. See if they’re done by poking with a fork, they should be soft all the way through.
  • To prepare the corn: steam for 5 minutes! 
  • To make the gravy: blend everything until smooth, adding water as needed.

Spiced-brandied Cranberry Sauce

After considering this recipe, I’m not sure why all cranberry sauce doesn’t have brandy in it. Or holiday spices like cinnamon, nutmeg and cloves. Like, what were we all thinking?

Cranberry sauce never tasted so good — bursting with warm spices, lively fresh orange and rich dark brown sugar, this boozy brandied cranberry sauce makes for one show-stopping holiday side dish and adds an elegant touch to your holiday table. You’ll never need another cranberry sauce recipe again.

INGREDIENTS

  • 1 cup orange juice
  • 1 cup dark brown sugar
  • 1 cup white sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground allspice
  • ¼ teaspoon ground nutmeg
  •  teaspoon ground cloves
  • 1 (12-ounce) bag of fresh cranberries
  • 2 tablespoons brandy
  • 1 tablespoon lemon juice
  • Zest from an orange

INSTRUCTIONS

  • In a saucepan over medium-high heat, add orange juice, sugars and spices and stir to combine. Bring to a boil, stirring occasionally to dissolve the sugar. Reduce the heat so that the mixture simmers for a couple minutes.
  • Bring heat back up to medium-high and add cranberries. Boil the cranberries until they pop and the mixture thickens to a gel-like, jammy consistency. If the mixture starts to boil too much, turn the heat down to medium. Stir occasionally. 
  • Remove from heat and stir in brandy, lemon juice and orange zest. You can serve it warm or cold. Enjoy!

Green Beans And Red Peppers

Green Beans And Red Peppers

It’s December, and I thought we should start out the holiday season with some new photos for this favorite dish of green beans with red peppers that I’ve been making for a few years now! You want special side dishes for holiday meals and these Roasted Green Beans and Red Peppers are not only beautifully red and green for the holidays, but they’re delicious!

INGREDIENTS

  •  1 heaping tablespoon of minced garlic
  •  1 heaping tablespoon minced ginger root
  •  3 T olive oil
  •  2 red bell peppers, cut into thin strips
  •  1 lb. thin French-style green beans, ends trimmed and cut in half
  •  salt and fresh-ground black pepper to taste

INSTRUCTIONS

  1. Preheat oven to 450F/230C.
  2. Mince 4-5 large garlic cloves, enough to make a heaping tablespoon of minced garlic.
  3. Peel ginger root and finely mince enough ginger to make a heaping tablespoon of minced ginger.
  4. Put olive oil, minced garlic, and minced ginger in a glass bowl or measuring cup and let it marinate while you prep vegetables. (This will slightly season the oil.)
  5. Cut red bell peppers into fourths lengthwise, then remove seeds and trim any white pithy parts.  Cut off rounded top and bottom parts to make it easier to cut even strips, then cut each piece of pepper into thin crosswise strips. Make the red pepper strips just slightly wider than the beans.
  6. Trim ends of green beans and cut them in half.  (To trim beans easily, loosely grab a handful and stand them up on the cutting board to line up the ends, trim, and then repeat with the other end.)
  7. Put the green beans and red pepper strips into a medium-sized bowl and then toss with the olive oil, minced garlic, and minced ginger.
  8. Spread the vegetables out on a large baking sheet, arranging it so vegetables are in a single layer as much as you can.
  9. Roast 20-22 minutes, or until a few beans are starting to look browned and the veggies are tender-crisp.
  10. Season to taste with salt and fresh ground black pepper and serve hot.

Christmas Vegan Roast

Make your festive dinner complete with this succulent Christmas Vegan Roast. It’s filled with savory flavors and finished with a mouth-watering glaze. This vegan roast recipe may look intimidating but it’s actually quite easy to make, so don’t be scared off. The hardest part is waiting for it to come out of the oven. I promise it’ll be worth it though! Check it out…

INGREDIENTS

Glaze (optional)

  • 1 tablespoon avocado oil or any oil
  • 1 tablespoon light brown sugar (sub maple or agave)

INSTRUCTIONS

  • Preheat oven to 400 °F (200 °C).
  • Heat 2 tablespoons of oil in a large pan over medium heat. Add the onion and sauté until translucent about 2-3 minutes.
  • Add garlic and sauté until fragrant about 30-60 seconds.
  • Now add the mushrooms and cook for 10-12 minutes until they have released their water, have reduced in size, are lightly golden and the pan is dry. Stir only occasionally so they have time to brown.
  • Pour in the soy sauce and stir into the mushrooms. Cook for 30-60 seconds, scraping up any bits on the bottom of the pan. Remove from heat and let cool for a few minutes. Measure out 2 exact cups of mixture (you may have a few tablespoons left over, just save for another recipe or add to toast).
  • To a food processor, add the 2 cups of mushroom/onion mixture, the remaining 1 tablespoon of oil, water, beans, nutritional yeast, bouillon, Worcestershire sauce, granulated garlic, granulated onion, rosemary, thyme, sage, smoked paprika, and pepper. Process for 2-3 minutes, scraping down sides as needed until everything is broken down and combined. It won’t be completely smooth.
  • To a large mixing bowl, add the vital wheat gluten and the mixture from the food processor, scraping everything out with a spatula. Stir until it just starts to come together (about 30-60 seconds). Now, using your hands, continue to combine while sweeping up all the vital wheat gluten in the bowl (30-60 seconds). Now knead the dough for 5 minutes (no less). The dough should be thick, slightly elastic, and somewhat fibrous looking. (* if your bowl is large enough, you can knead the dough in there, otherwise, knead on a clean flat surface).
  • Let the dough rest for 5 minutes then knead for 30-60 seconds and shape the dough into a loaf shape about 8 inches long and 3.5″ inches wide. Roll the loaf in a piece of parchment paper, then roll in a piece of foil that’s about 20″ long, and twist the ends like a candy wrapper, securing in place.
  • Bake for 80 minutes, flipping halfway through. Now remove from oven and allow the roast to sit undisturbed for 20 minutes (no less). Remove from foil and parchment. You can slice and serve now OR prepare the loaf for glazing (next step).
  • Preheat your oven broiler to the low setting. In a small bowl, combine the brown sugar, oil, and soy sauce until the sugar has dissolved. Now, place the loaf back in the roasting pan and brush the top and sides with the glaze. Broil for 2-3 minutes until you see the glaze start to caramelize. Now brush one more layer on the top and sides and broil for another 2-3 minutes, watching carefully to prevent burning.

Festive Vegan Vegetable Pie

 

Is there anything better than sitting down for a dinner and discovering the main course is a vegan pie? We think not!

If you’re looking for something different to your usual nut roast or vegan roast this, Christmas, try this festive vegetable pie.

Much like a traditional vegetable pie, this vegan pie recipe features a shortcrust pastry case with layers of sautéd vegetables.

The plant-based pie is filled with rosemary-roasted potatoes and peppers, sautéd onions and greens, and a mushroom mix seasoned with garlic. It really is a taste sensation, not to mention an eye-catching centrepiece too.

INGREDIENTS

For baking:

  • 3 red peppers, seeded and quartered lengthways
  • 3 medium potatoes, thinly sliced
  • oIive oil, as needed
  • salt and pepper, to taste
  • 3 Tbsp rosemary
  • 700 g shortcrust pastry (homemade or storebought)
  • flour, for dusting

For sautéing:

  • 1 large brown onion, sliced
  • 3 garlic cloves, crushed
  • 60 g packed spinach or kale
  • 150 g firm tofu
  • 3 Tbsp nutritional yeast
  • 0.50 tsp ground nutmeg
  • 250 g mushrooms, thinly sliced

To assemble:

  • 2 Tbsp olive oil or vegan butter, melted

INSTRUCTIONS

  1. Preheat the oven to 180°C/Gas Mark 4.
  2. Place the red peppers on a lined baking tray. Drizzle with olive oil and season with salt and pepper.
  3. Arrange the potato slices on another lined baking tray. Drizzle with olive oil and season with salt, pepper and rosemary.
  4. Bake the peppers and potato in the oven for about 20 minutes or until they are both tender. Set aside.
  5. On a floured surface, roll out 500g of the pastry to about 5mm (2/5in) thick. Transfer the pastry to a 20cm (8in) deep cake tin. Press the pastry against the bottom and sides to form a crust. Cut off any overhang. Use a fork to prick the bottom.
  6. Bake the pie crust in the oven for 10 minutes and set aside.
  7. Meanwhile, sauté the onion and garlic with a little olive oil until soft and fragrant. Set aside half the mixture.
  8. Add the greens to the saucepan with half of the onion and garlic mixture and cook until wilted. Set aside in a food processor.
  9. Add the mushrooms and remaining onion and garlic mixture to the saucepan. Cook until soft and fragrant. Season with salt and pepper and set aside.
  10. Add the firm tofu, nutritional yeast and nutmeg to the spinach or kale mixture. Pulse until the mixture forms coarse crumbs. Season with salt and pepper and set aside.
  11. To assemble the pie, press the spinach or kale and tofu mixture into the bottom of the pie. Layer with the peppers, then potatoes then the mushroom mixture.
  12. Roll out the remaining pastry on a floured surface in a circular shape. Transfer the pastry to cover the pie and cut off the overhang. Press the edges together. Use any excess pastry to make shapes for decoration.
  13. Brush the top of the pie with melted butter or olive oil and bake for 30 minutes or until the top is golden brown. Leave the pie to cool in the tin for 20 minutes, then take it out to cool.
