Serve at your plant-based feast alongside vegan gravy, mashed potatoes, and a classic green bean casserole.

INGREDIENTS

  • 1 cup unsweetened, unflavored plant-based milk
  • ½ cup unsweetened applesauce
  • 3 tablespoons flaxseed meal
  • 1 tablespoon pure maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 cup whole wheat flour
  • 1 cup yellow cornmeal
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon sea salt
  • 8 oz. fresh button mushrooms, coarsely chopped (3 cups)
  • 2 apples, cored and chopped (2 cups)
  • 1½ cups chopped celery
  • 1 cup chopped onion
  • 3 cups low-sodium vegetable broth
  • 2 tablespoons chopped fresh sage
  • 1 teaspoon poultry seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon freshly ground black pepper

INSTRUCTIONS

  1. For cornbread, preheat oven to 375°F. Line an 8-inch square baking pan with parchment paper or use a silicone baking pan. In a medium bowl stir together milk, applesauce, 1 tablespoon of the flaxseed meal, the maple syrup, and vinegar. Let stand 5 minutes.
  2. In a large bowl stir together the next five ingredients (through salt). Stir in milk mixture just until moistened. Spread batter in the prepared pan.
  3. Bake 30 to 35 minutes or until a toothpick inserted in center comes out clean. Cool in pan on a wire rack 30 minutes. Cut cornbread into 1-inch cubes and place on a baking sheet. Let dry at room temperature 24 hours or bake in a 300°F oven 20 to 30 minutes or until dry.
  4. In an extra-large skillet cook mushrooms, apples, celery, and onion over medium about 8 minutes or until tender, stirring occasionally and adding vegetable broth, 1 to 2 tablespoons at a time, as needed to prevent sticking. Stir the remaining 2 tablespoons flaxseed meal into the remaining broth; let stand 5 minutes. Stir sage, poultry seasoning, smoked paprika, and black pepper into vegetables.
  5. Preheat oven to 350°F. In an extra-large bowl combine cornbread cubes, vegetables, and broth mixture. Toss very gently to mix. Transfer to a 3-quart baking dish; cover.
  6. Bake 20 minutes; uncover. Bake 15 to 20 minutes more or until heated through and browned in places.

The dry rice grains are toasted with chopped onion to bring out their rich, nutty flavor and then cooked in tomato sauce with peas and carrots until it gets delightfully creamy. There’s nothing better than pairing a big spoonful of this cilantro-studded rice with enchiladastacos, or tostadas to create a full-on feast. This recipe makes a big batch, but you can store it in an airtight container in the refrigerator for up to four days.

INGREDIENTS

  • 1¼ cups dry long grain brown rice, rinsed and drained
  • 1 cup finely chopped yellow onion
  • 8 cloves garlic, minced
  • 1 teaspoon dried Mexican oregano, crushed
  • 1½ cups fresh or frozen green peas
  • ½ cup finely chopped carrot
  • 1 8-oz. can tomato sauce (¾ cup)
  • 2 tablespoons finely chopped fresh cilantro
  • Sea salt, to taste

INSTRUCTIONS

  1. In a large saucepan combine rice, onion, garlic, and oregano. Cook over medium-low 10 minutes or until onion is softened and rice is toasted. (There should be enough moisture from the onion and rinsed rice to prevent burning.) Stir in peas, carrot, tomato sauce, and 2 cups water. Bring to boiling; reduce heat. Cover and simmer 25 to 30 minutes or until rice is tender and water is absorbed. Turn off heat; let stand, covered, 10 minutes.
  2. Uncover pan. Stir in cilantro and season with salt. Use a fork to fluff the rice and combine ingredients.

A hearty casserole recipe that’s good for groups, this “burrito bake” is full of veggies, potatoes, and beans. Despite “breakfast” being in the title, this makes an ideal breakfast, lunch or dinner meal. Grated potatoes are added to the vegetables and beans to give some “grip” to the dish, and more grated potatoes get mixed with a little nutritional yeast to create a cheesy-looking topping. This makes a lot of food—perfect for leftovers! It also has a lot of ingredients, so I suggest assembling and prepping all of your items before you start cooking.

INGREDIENTS

  • 3 large russet potatoes, shredded (peeled or unpeeled)
  • 2 tablespoons nutritional yeast, divided
  • ½ yellow onion, diced small
  • 1 red or orange bell pepper, diced small
  • 1 zucchini, diced small
  • 8 to 10 white or cremini mushrooms, sliced
  • ½–1 bunch greens (kale, chard, collards, spinach, etc.) chopped into bite-size pieces
  • Juice from 1 lime
  • 2 teaspoons dried basil
  • 1½ teaspoons garlic powder
  • 1½ teaspoons oregano
  • 1 teaspoon chili powder
  • ¼–½ teaspoon red pepper flakes
  • 1 (15-ounce) can diced tomatoes
  • 1 (15-ounce) can black beans
  • 1 (15-ounce) can pinto beans
  • ½ cup chopped fresh cilantro leaves

INSTRUCTIONS

  1. In a large soup pot with 1 inch of water in the bottom, steam the grated potatoes (in a steamer basket) for 5 to 10 minutes on medium-high heat until soft.
  2. Divide potatoes equally into two bowls.  Stir 2 tablespoons of nutritional yeast into one of the bowls of potatoes, and mix thoroughly (it will have a somewhat gluey texture). Set bowls aside.
  3. Rinse out the soup pot, place it on the stove over medium-high heat, and sauté the onion, bell pepper, zucchini, and mushrooms in 2 tablespoons of water for 5 minutes. If needed, add more water, 1 tablespoon at a time, to prevent vegetables from sticking to the pan).
  4. Add the greens to the sautéed vegetables, and cook a few more minutes until soft. Add the lime juice, dried herbs and spices, 1 tablespoon of nutritional yeast, and the steamed potatoes without the nutritional yeast.
  5. Remove pot from heat, and fold in the tomatoes, beans, and cilantro.
  6. Spoon mixture into a dry 13×9-inch glass baking dish and smooth over the top. Spread the nutritional yeast-potatoes mixture evenly across the top with a spatula; it will be a little sticky, but it doesn’t have to be perfect or even go all the way to the edges (this will give a melted cheese appearance when cooked). Bake at 375º F uncovered for 35 to 45 minutes until topping is lightly browned around the edges. Let sit for at least 5 minutes before serving. Optional: garnish with a few pumpkin seeds.

    Chef’s Notes:  I grate the potatoes here but you can also use mashed potatoes in the same way. It won’t have a cheesy look; it will look more like Shepherd’s pie.

    This is a very flexible recipe, so use any kind of beans or veggies you like. If you want a spicier flavor, use hot chili powder (I use ancho chili powder, which is mild) and/or more chili powder. Red pepper flakes are quite hot, so add according to your heat tolerance, or eliminate completely if you do not like spicy foods.

    The brand Muir Glen makes a Fire Roasted variety of diced tomatoes, which works well here.

    If you are using beans cooked from scratch, use 1½ cups for each, pinto and black.

    In addition to garnishing with whole pumpkin seeds, try placing a small handful into a rotary cheese grater to create a Parmesan cheese effect.

I highly recommend using silicone muffin pans: You’ll never have to buy paper liners again.

INGREDIENTS

  • 4 very ripe bananas
  • 2 cups oats, ground into flour
  • ½ cup unsweetened apple juice
  • ½ cup unsweetened applesauce
  • 2 tablespoons ground flax seeds
  • 1 teaspoons ground cinnamon
  • ½ tablespoon alcohol-free vanilla extract
  • ½ tablespoon apple cider vinegar
  • ½ tablespoon aluminum-free baking powder
  • ½ teaspoon sodium-free baking soda

INSTRUCTIONS

  1. Preheat oven to 350º F.
  2. Line a muffin pan with 12 cupcake liners.
  3. Grind oats into a flour.
  4. Place in a large bowl and add all the other dry ingredients.
  5. Puree bananas in a food processor fitted with the “S” blade until smooth.
  6. Add the apple juice, applesauce, extract and apple cider vinegar and process again until combined.
  7. Pour over dry ingredients and mix until just combined.
  8. Do not over mix.
  9. Pour into muffin liners filling about 2⁄3 full.
  10. Bake for 20-22 minutes until tops are golden brown and toothpick inserted in the center comes out clean.
  11. Chef’s Note: Gently stir in 2 cups of frozen blueberries for blueberry banana muffins and increase baking time 8-10 minutes.

  • 3 lb. small to medium whole multicolor carrots, trimmed
  • 2 tablespoons lemon juice
  • 2 tablespoons tahini
  • 2 teaspoons ground cardamom
  • ½ teaspoon ground cinnamon

  • ½ cup pomegranate seeds
  • Freshly ground black pepper, to taste

INSTRUCTIONS

  1. Preheat oven to 400°F. Line a large rimmed baking sheet with parchment paper or a silicone baking mat. Place carrots on prepared baking sheet. In a small bowl whisk together the next five ingredients (through cayenne pepper) and ¼ cup water. Lightly brush mixture over carrots.
  2. Roast carrots about 40 minutes or until browned and tender, brushing lemon juice mixture over carrots several times. Transfer to a serving platter. Sprinkle with pomegranate seeds. Season with black pepper.

  1. In a large saucepan combine sweet potatoes and apple. Add water to cover. Bring to boiling; reduce heat to medium-low. Cover and simmer 15 to 20 minutes or until sweet potatoes are very tender. Drain. Mash sweet potatoes until smooth.
  2. Preheat oven to 350°F. Beat 4 tablespoons of the maple syrup and the next four ingredients (through vanilla) into sweet potatoes. Gradually stir in enough milk to make a smooth mixture. Season with salt.
  3. In a medium bowl place aquafaba, cream of tartar, and the remaining 1 tablespoon maple syrup. Beat with a mixer on high until stiff peaks form (tips stand straight). Fold into mashed sweet potatoes. Gently transfer mixture to a 2-quart baking dish.
  4. Bake 30 to 45 minutes or until sweet potatoes are heated through and browned in places.

Sweet cherry tomatoes get deliciously tender as everything simmers and add bursts of fragrant flavor with every bite. Chickpeas offer extra heft, while a garnish of celery and fennel leaves tie it all together with a delicious herbal finish. Sop up the broth with crusty whole wheat bread, and you’re in business!

Tip: If using white wine in this stew, the alcohol will cook off, leaving its flavor notes behind. You can just as easily use broth in its place.

INGREDIENTS

  • 1 lb. fresh king oyster mushrooms and/or regular oyster mushrooms, cut into 1-inch pieces
  • 1 cup chopped onion
  • 1 cup chopped celery (leaves reserved for garnish)
  • 1 bulb fennel, cored and thinly sliced (fronds reserved for garnish)
  • 6 medium cloves garlic, minced
  • 1 cup low-sodium vegetable broth
  • ¼ cup white wine or low-sodium vegetable broth
  • 2 cups cherry tomatoes, halved
  • 1 tablespoon reduced-sodium seafood seasoning (such as Old Bay)
  • 3 15-oz. cans no-salt-added chickpeas, undrained
  • 1 14.5-oz. can no-salt-added diced fire-roasted tomatoes
  • 1 teaspoon chopped fresh thyme
  • 1 bay leaf
  • 1 tablespoon lemon juice
  • Freshly ground black pepper, to taste
  • 4 slices whole grain baguette, toasted
  • Lemon wedges

INSTRUCTIONS

  1. Heat an extra-large nonstick skillet over medium-high. Add mushrooms; cook 4 to 5 minutes, stirring occasionally, until mushrooms are lightly browned. Remove from heat.
  2. In a 5- to 6-quart Dutch oven cook onion, celery, fennel, and garlic over medium 5 minutes, stirring occasionally and adding broth, 1 to 2 tablespoons at a time, as needed to prevent sticking. Add wine; cook 4 minutes or until wine has evaporated. Add the remaining broth, the cherry tomatoes, and seafood seasoning. Bring to boiling; reduce heat. Cook, uncovered, over medium 5 minutes or until tomatoes are starting to break down. Add chickpeas, undrained fire-roasted tomatoes, thyme, bay leaf, and browned mushrooms. Bring to boiling; reduce heat to medium- low. Simmer, uncovered, 20 minutes to blend flavors.
  3. Remove bay leaf. Stir in lemon juice. Season with pepper. Serve with toasted baguette slices and lemon wedges. Garnish with celery leaves and/or fennel fronds.

  • 1 tablespoon + ⅛ teaspoon paprika
  • 1½ teaspoons ground cumin

INSTRUCTIONS

  1. To make BBQ Spice Blend, stir together 1 tablespoon paprika, 1 teaspoon garlic powder, 1 teaspoon onion powder, and 1 teaspoon dry mustard, ½ teaspoon freshly ground black pepper, the cumin, brown sugar, cayenne pepper, and cinnamon in a small bowl. Store in an airtight container. Makes about 3 tablespoons.
  2. For BBQ chickpeas, preheat an air fryer to 360°F. In a medium bowl toss together chickpeas, 1 tablespoon of BBQ Spice Blend, and 1 tablespoon lime juice. Place half in air fryer. Air-fry 10 to 15 minutes or until browned and crisp, stirring occasionally. Transfer to a rimmed baking sheet to cool. Repeat with remaining chickpeas.
  3. In a bowl combine romaine lettuce and the next five ingredients (through red onion). In a blender combine the remaining 1 tablespoon lime juice, the avocado, parsley, remaining ½ teaspoon each of garlic powder, onion powder, and dry mustard, and remaining ⅛ teaspoon paprika. Cover and blend until smooth, gradually adding milk to reach drizzling consistency. Drizzle over salad; toss to coat. Season salad with salt and black pepper. Top with chickpeas.

Note: If you don’t have a panini press, serve as an open-faced toasted sandwich. Notes one reviewer: “Very pretty and flavorful. It will be a family favorite!”

Crispy bread, creamy pesto, and loads of warm, savory veggies—are you drooling yet? These superb sandwiches are the answer to all your mealtime woes. Yellow squash and spinach are sautéd with tangy red onions and sun-dried tomatoes to create the perfect plant-based panini filling. Make sure to whip up an extra large batch of the homemade white bean pesto (which gets a cheesy boost from nutritional yeast) so you can use leftovers as a pizza sauce or a dip for raw veggies. Press it all between two slices of whole wheat bread, and you have an excellent meal on your hands. Take it up a notch by adding a cup of tomato soup on the side!

Tip: If you don’t have a panini press, toast the sandwiches in a nonstick skillet over medium-high heat, turning once. Press sandwiches with a heavy skillet while they cook.

  • 1 large yellow summer squash, thinly sliced
  • 1 medium red onion, sliced
  • ¼ cup sun-dried tomatoes (not oil-packed)
  • 4 cups fresh baby spinach
  • 8 slices whole grain bread

INSTRUCTIONS

  1. For pesto, in a food processor combine the first five ingredients (through cayenne pepper). Cover and pulse until smooth, gradually adding 2 to 3 tablespoons of the reserved aquafaba to reach desired consistency. In a small bowl combine beans and half of the pesto. Mash beans with a fork until mostly smooth.
  2. In a large skillet cook summer squash, onion, and sun-dried tomatoes over medium 3 to 4 minutes or until squash is crisp-tender, stirring occasionally and adding water, 1 to 2 tablespoons at a time, as needed to prevent sticking. Stir in spinach just until wilted; remove from heat.
  3. Spread remaining pesto on four slices of bread and bean mixture on other four slices. Press vegetables into bean mixture. Top with pesto-spread slices of bread.
  4. Heat panini press to medium-high. Add a sandwich; cook 3 to 4 minutes or until bread is toasted. Serve immediately.

The liquid that you find in a can of chickpeas is precious stuff: Its viscosity makes it a fabulous substitute for eggs in all sorts of recipes. We love using it in baked goods and whipped toppings, such as our Aquafaba Whipped Cream.

Aquafaba, that viscous liquid you see when you open a can of chickpeas, makes a great vegan substitute for eggs in baked goods—and if you’re out of canned chickpeas, you can create homemade aquafaba with this recipe.

Aquafaba’s unique composition of starches and proteins—which results from soaking and cooking the beans—makes it useful for thickening, binding, emulsifying, and foaming. Try it in French toastwafflesfrittatas, and more. The liquid in canned or boxed chickpeas has the ideal consistency, but you can also make your own. To get the right viscosity, the chickpeas should be soaked overnight and then cooked in their soaking water. Soaking releases the necessary enzymes to give the liquid its viscosity.

INGREDIENTS

  • 1½ cups dried chickpeas, rinsed
  • 4 cups water

INSTRUCTIONS

  1. Rinse the chickpeas, transfer them to a large pot, and cover with fresh water. Let it stand overnight.
  2. In the morning, check the level of the soaking water: If the chickpeas aren’t completely submerged, add just enough water to cover them.
  3. If using the stovetop method, place the pot over high heat, bring the water to a boil, then reduce the heat and simmer for 25 to 30 minutes, or until the beans are tender when squeezed.
  4. If using a stovetop pressure cooker, transfer the chickpeas and their soaking water to the pressure cooker, and cook under pressure for 7 to 10 minutes, then let it stand for 10 to 15 minutes for the pressure to be released before opening the cooker.
  5. If using an electric pressure cooker, follow the manufacturer’s instructions for soaked beans.
  6. Once the beans are cooked, use a strainer or fine sieve to strain the aquafaba into a large liquid measuring cup, and let it cool. If the aquafaba is the correct consistency, you will have about ¾ cup to 1 cup. If you have more liquid than that, you will need to cook the liquid down to the right consistency. Transfer the liquid to a small pan, bring it to a boil, and simmer for 5 to 10 minutes until you have ¾ cup to 1 cup. (Conversely, if you have less than ¾ cup cooled aquafaba, you’ve probably cooked it down too much; in that case, bring it back to boil, add some water to dilute it, and stop cooking when you have the right amount.)

    Storage tip:  Homemade aquafaba will keep in a Mason jar in the refrigerator for two to three days. You can also freeze it in convenient ¼-cup or ½-cup portions for up to two months. (Don’t forget to rinse and drain the chickpeas, and refrigerate or freeze them until ready to use.)
